So my Girlfriend wants to start playing wow. problem is she has never played video games, and she is struggling a little bit with understanding everything to do...She wanted to start a rogue, Is there a different class that would be better for a complete beginner? Any other tips to help her?

Hunter for certain. It's very versatile and easy to play. Not to mention it's easy to solo all the through the game with it. Perfect for some one new. Easy to itemize.
Warrior in my opinion is too difficult for new players to master. Too much stance dancing and strong focus on itemization.

Yeah, I really cannot recommend a Warrior for someone new, and new to games. It's an extremely gear dependant class, and is very unforgiving in many situations like adds.
Rogue might be ok, it can be quite complex though.
I'd recommend Druid. It gives you a range of playstyles rather than stick you into just one. And it's pretty forgiving when learning the game due to instant cast HoTs.
Hunter is also good. Pet classes are typically really easy and fun for people learning the game.
