How hard is it to keep two completely dfferent gear sets?

Depends on your guild, in particular the gear level of the people who could use your offspec gear for their mainspec. i.e. if you start raiding as feral with restos in your raid that have every item they need already, you'll be getting any leather healing drops pretty easily. If they need the healing gear themselves, you won;t be touching it untill they are fully geared. Common sense really.

Actually I got a tank set, a boomkin set, a resto set and a cat set. All good for Naxx 25.
What I did is used heroics/crafted/rep gear as a base then I went to naxx 10/25 with one of my old gear and said to the raid leader: I am not rolling on resto gear main spec ( If I am coming as a healer ), I am rolling on cat dps main spec.
Most PuG leaders will accepts.

I dual spec moonkin / resto. Several parts of my moonkin set are also very good for healing (Unsullied cuffs, Leash of Headless Magic, Torch of Holy Fire, ...) which helps a lot. That being said, even with those two sets sharing items and main stats, my resto set is largely inferior to the moonkin set. It's still enough to heal correctly in Ulduar, but the set bonuses for example will take me a long time to get.
(and that's while raiding almost all evenings and having had a dearth of trees for some time)
I also have a decent feral set on the side (though i haven't bothered enchanting and gemming it yet) made from offpieces from Nax25 and even a few Ulduar 10/25 ones, but there's no coherency behin dit in terms of hit/expertise cap or whatever.
It is feasible to maintain two correct sets, but you'll have to come to terms with your offspec set being of lower quality, if only because of lack of set pieces (vanquisher have the most people wanting them in our raids :/)

i'm currently running 4 sets of gear,
tank
dps
resto
resto pvp,
basicaly my main is tank/resto these are both 213
resto pvp is just that
dps i use my tank spec and just put this gear on normaly just my old tank gear rejemmed and enchanted, no where near as good but works fine to do herioc dps and nax 10.
biggest thing is i respec pvp after i have done my raids at the start of the week, normaly by thursday i'm done so i can repsec and pvp for the rest of the week for 20g.

Low level Feral Druid here. I keep a Cat set and a Tree set with me.
It's not hard at all, except for the loss of some bag space. Just use something like
Outfitter
to manage your gear (the built in equipment manager is a little lacking).

I think you will always have one set of gear better than the others, but for example if you are Feral cat / Feral tank or Boomkin / Resto then some of your gear is interchangeable between the two specs, which makes it easier.
This person speaks the truth. On my Paladin my Holy set is better than any of my other sets.
On my Warrior, he only has one set of gear since his job is to just farm crap and solo dailies.
On my DK my Tanking set far outclasses my DPS set.
On my Druid... well, both Tree and Cat sets are fairly good, but my Feral set gets first pick on any new gear (except if it's a dungeon loot, in which case i get caster gear since i heal).

I also have 4 sets of gear:
Tank
Cat
Boomkin
Resto
At least with Boomkin/Resto you stack similar stats (aside from hit). Both favour haste over crit for example.
I have the same issue with my priest though:
Disc (crit)
Holy (Haste stackage)
Shadow (Crit and hit)
PvP (Resilience!)
Got almost 4 completely different sets there to make sure the stats way up the same. Only thing I have that stays the same is weapon (mostly) which I just swop out my staff for Torch of Holy Fire and Iron Mender for shadow.

also I found that while tanking heroics I usually tend to get alot of moonkin/tree gear because it is usually otherwise sharded.
On that note I actually have some VoA t8 for moonkin as well so I would just keep building your main set and you will slowly build a nice set of everything else (at least heroic gear) then if you want to respec and change roles you will have decent gear.

I have 2 gear sets, one resto and one moonkin. They only share a couple common pieces and my moonkin set is hitcapped with or without heroic presence. Using wow-heroes rating system, both gear sets are over 2300, basically ulduar ready.

Ya, if you want top quality gear, you need to either stick with caster, or stick with melee/tank. I never get caster weapons/off hands in raid, and rarely get caster gear except on occasion.

Depends on your guild. But in most situations i would say its far easier to gear an offspec feral than it will be to gear an offspec resto. The reason being Resto spec druids are far more common then feral spec druids. In my experiences, feral druids/rogues are not often overly represented in any raids i have been in, but I have been in quite a few raids with many boomkins/trees.
The hardest parts to gear up will be accessories like rings/neck and your weapon slot. You will be very hard pressed to get a caster weapon because there is bound to be someone that needs it as an upgrade, whereas once the other ferals/hunters are done you can get your feral offspec weapon. Rings/neck are equally hard to get offspec.
My guild runs with 1 feral druid and 1 rogue (which makes me pretty lucky esp since both are well geared already) in 25 which means i can get offspec leather pretty easily. (I'm also the only tree too; we have a couple boomkins as well).
