Hi, as a holy paladin on the same content like you, I suppose I could share some light with you about the things you ask about:
ToGC10
:
Go with 2 healers, except Valkyrs, where 3 are optimal. But just one tank on Valkyrs, as long as you help him with aggro, can tank them both together, so the other one can go DPS or at least collect the spheres to mitigate raid damage.
ToGC25
:
INT is optimal. Spam HLs whenever needed, add FoLs if the damage is low and you want to save some mana.
Macro
:
/cast Divine Illumination (3m CD)
/cast Avenging Wrath (3m CD)
/cast Divine Favor (optional - I dont use it at all so I just hid it into this macro; 2m CD)
/use trinket (2m CD)
Use this whenever of CD and with Divine Plea (but not in HPS heavy situation, for your heals will drop a bit; but on the other side, you can happily spam HL with this macro and still gain mana)
Use Divine Plea itself anytime there is low tank damage (beasts - Gormok dies and worms are coming, worms are burrrowed, Icehowl has bumped into the wall etc...)

Put Nightmare Tear (+10 all) to any socket where the socket bonus results into +INT. Put INT everywhere else. Use Insightful meta.
(EDIT: I mean one Tear total. Not one per +int bonus:))
Mp5

The more INT you have, the less useful Mp5 is. I used a lot at 200/226 ilvls, but I avoid it now if I can at 245 ilvls. No problems with mana if you can manage DP and dont spam HL when not needed.
Judgement
:
Dont judge light if there is another paly. The healing will be done regardless of who judged, but you get (slightly) more mana with wisdom. This wont make/break the fight though.

1. Why is Mp5 better than crit? mp5 gives more mana returns but crit also gives you extra healing. is it better a haste/mp5 item over a haste/crit?
MP5 is one of many ways to prevent running out of mana. Zero mana = zero healing! Before everything you need to prevent running out of mana, because an OOM (out of mana) healer = dead group/raid. Everything else (sp, haste, crit) means nothing without mana. The perfect balance between MP5 and crit is based on your healing style; you will have to find that balance yourself.
2. Should all my gems be yellow Int ones?More INT = more mana, more sp, more crit, basically more everything. But most of all more mana = more heals! So yes, most healadins will tell you to stack yellow INT gems until you find that you never run OOM again.
3. I have my trinket macro'ed to my judgement so i can use it every time i can. Then i got the "buffup spells": Divine favor and Avenging wrath (macroed with Divine Illumination), but i never see a good time to use those 2. When is it recommended to use them?Depends on the fight: use it when you need some extra heal power: like just before a raid boss special attack.
4. Should I save my Divine plea for when I use the buffup spells? If you run OOM a lot, use them as much as you can to prevent running OOM. Half healing is better than no healing. You might link them to Avanging wrath and/or a trinket to buff up your healing, so healing will not dip too low. Once you don’t go OOM anymore that often, wait with Divine Plea until a moment where you can afford to do some lower healing for a few moments (like when Icehowl is stunned and therefore is not doing raid damage).
5. Judging light will make my HpS seems higher, but I usually judge wisdom, is either one ok? If you find yourself OOM a lot, use wisdom to squeeze out every bit of mana you can (starting to notice a pattern?), else judge Light. Also check with your fellow pallies in the raid to coordinate the judgements.
6. Are there any uses for Divine Sacrifice without Divine protection? In raids, not really (as far as I know).
Those are all the questions I got ^_^. I'm worrying mainly because a Pally with worse gear than mine is healing a lot more than me. and I don't really know why. I have bigger problems at ToGC 10 mainly because it's only me healing both tanks, but everyone said it's doable. so I'm confused.Keep Beacon up at the MT at all times, keep Sacred Shield up on either the MT or the OT (whoever needs it more) and keep the HoT that is linked to Sacred Shield up at all times too. Be careful not to run OOM at all times, keep healing the OT (and the MT through the beacon) and you are off to a good start. There are many other tips and pointers (read this forum, you will find all of them here) but these are the basics.

Check out the link in my signature first, but there are a couple things you asked that I don't think I answered there.
3. Don't macro your trinket to a judgment. Most WotLK fights go in cycles of easy parts and hard parts. Save your trinkets for the hard parts.
4. By contrast, save DP for the easy parts.
5. You should coordinate with other paladins about what judgment you use. I
believe
JoL is affected by Divinity so if a paladin in your raid is specced into that (as you might be if you've gone sub-prot, which I assume have if you have questions about DS) it would be best if you did it.
The other questions I answered in the guide, if you read it carefully.
