Yeah, I've done a bit more research and realised that. The Wowwiki article isn't terribly well written, unfortunately, since it opens with "dodge or parry". It took me quite a while to dig out the base parry chance. I was working on the presumption that the parry chance was equal to the dodge chance, as with player mechanics.
On a side note, it's worth noting though that after 6.5% Expertise, you'll get slightly more value out of Expertise than you will from Hit, simply because your starting coefficient is lower. But only until you have an equal chance to miss and parry.

But yea, expertise. Once you get past 6.5% expertise (as a tank) expertise is indeed still a superior stat, but thats because it reduces the 'Parry Gib' effect. Basically every attack that gets parried increases the bosses white damage swing timer, potentially allowing for a large spike in damage. In effect it
almost
makes Expertise an avoidence stat.
parry gibbing was in bc, now no one is worrying about parry gibbing
until you get 26 expertise, one expertise remove 0,25% dodge and 0,25% parry
after 26 expertise its only removing 0,25% parry so after it, expertise is more expensive stat than used to be, so after 26 expertise dont focus on it

Single wielding, attacking from the front:
Melee hit up to 8% will push the chance to miss off the boss's attack table. After this it does nothing to the chance to miss, since there is only an 8% chance to miss the boss.
Expertise up to 6.5% will push the chance to dodge off the boss's attack table. After this it does nothing to dodge, since there's only a 6.5% chance for the attack to be dodged.
Expertise up to 6.5% will also push 6.5% chance to parry off the boss's attack table. After this it still lessens chance to parry, because the boss's chance to parry is around 14%.
Expertise up to 14% will push the chance to parry off the boss's attack table. After this it does nothing.
For melee that attacks from the front and does not rely on spells (i.e. prot warriors, feral bears and blood DKs), Expertise up to 6.5% is always preferable to hit since it eliminates
both dodges and parries
. Even past 6.5% expertise is preferable to hit since it lessens parry haste (parry gibbing is not an issue anymore, but it still reduces incoming damage).
It's in fact impossible for it to work any other way since dodge and parry are separate mechanics.
Expertise is not any more expensive than hit. 1 point of expertise SKILL reduces parry/dodge by .25%. 1 point of skill = 8.2 rating, which means 1% reduction costs ~32.8 expertise rating. Which is exactly the same cost as hit rating.
Any respectable warrior or druid tank's threat set is both hit and expertise capped, or as close as they can get to the expertise hard cap. The only reason to focus on hit after soft capping expertise is that taunts can be resisted if you're below 8% hit.

Pretty much what's been stated.
Expertise is better then +hit on a physical scenario. The more spells you use, the more useful +hit can be.
What i find odd is how no one has mentioned how it also removes block. Or am i mistaken in that regard... although i can't recall the last time i was blocked by a mob on my druid.

It still very much exists, but as its been fairly drilled into every dpsers head to be behind the boss you will only really see it on bosses like Kologarn and Auriaya.
You can easily go behind Auriaya as dps, you just need to be prepared to get infront of her at the right time.
Regarding the whole expertise talk:
1 expertise is worth twice until 26 expertise.
Going for hard cap is silly.
