Having a low hit rating can cause problems, mostly at the beginning of fights because DPS can't hold their water and want to go go go. You need to hit all your big threat items early so you don't lose control.
So don't beat yourself up if you're not all the way to the hit cap, but having 0 or near 0 can be bad.

don't be too worried about it.
with zero, you have an 8% chance to miss - not the end of the world, especially when you're just starting out.
as you get better gear, the hit will come.

Unfortunately there doesn't seem to be a lot of hit rating on any of the good ToC gear. I've gotten 9 new tanking pieces from 10 and 25 man ToC, and my hit rating is down to 161 (4.91%). I'm not overly happy about that, but I'm not going to gem for hit either; it's just not that important.
After trying to do 25m Heroic ToC today and getting absolutely wailed on by the bosses, I'm going to keep stacking my stamina. I hit just over 50k health fully buffed tonight and was still getting two-shot by Gormok in phase 1. I get one-shot if I don't have either Last Stand or Shield Wall active.

Hit rating really isn't all that important and if you don't get it with gear, don't bother gemming or enchanting for it.
What
is
important, however, is expertise. For threat, it's simply the best stat out there; hit only helps you to "hit" the boss per se, while expertise stops the boss from dodging and parrying. I suppose the simplest way to look at it is like this:
1) You can miss.
2) A boss can dodge.
3) A boss can parry.
Those are three ways in which your attacks will have no effect on the boss whatsoever and, therefore, won't build any threat. Hit rating only affects one of those issues, while expertise affects two. Therefore, put simply, expertise is twice as good.
My advice is to go for what's known as the "dodge" cap for expertise, which will (obviously) remove a boss' chance to dodge your attacks. This is 26 expertise. Stacking beyond that is more heavily affected by diminishing returns, so it's not really worth continuing.
You will, however, see a marked difference in your threat output if you hit the magic mark of 26 expertise.
The problem?
Yep, you guessed it; there isn't a lot of gear out there that's heavy on expertise. Luckily, there are quite a few red slots in warrior tanking gear and that's the best place to pop in some expertise gems. While the obvious choice is
Guardian's Twilight Opal
for slightly lower end gear, you're saying you're doing the Trial of the Crusader so go for the
Guardian's Dreadstone
.

I understand that going for threat may seem a bit strange while bosses are running around two shotting people, but it's a sad fact that warriors are low on threat and, unfortunately,
do
need to pay attention to it in order to keep up with the other three classes, paladins particularly. And because paladins are more powerful than warriors in pretty much every other way, you're not likely to get much leeway before someone asks the most horrible question a warrior can hear:
"Can't we just get a paladin for this?"

As for hit rating, after a few upgrades mine was very low and I'll tell ya - it absolutely stinks when you need to taunt off of your fellow tank and it gets resisted. Think Thorim's unbalancing strikes.

Meh, you have three separate taunts so it's never really a problem.
I think only one of them works like a true taunt mechanic. Other are just "force to attack for x seconds." nothing to do with threat.
Exactly, not getting hit = no rage = no ability to build threat, I'm not the best at tanking on my war, but tanking on my 75 pala is way easier.

Doesn't matter. If you can force the target to attack you for those few seconds, your regular taunt cooldown will be ready.

RNG was making me look like a chump on 25mH Northrend Beasts last night; I was the only tank that kept missing my taunts. I ended up putting vigilance on the tank I would be taunting off of in order to get the taunt refresh. Even with two-piece T9.5 set bonus my taunt wasn't coming off cooldown with enough time to spare in the 10 seconds window you have to taunt.
