For totems, I'd say ignore them. Unless your either in an area with a lot of mobs in close proximity, or going up against mobs that will be fairly difficult for you to kill, they will more or less be both a waste of time and mana.
However, for when you do use them, I'd suggest getting a totem mod to help keep them more or less organized. I use Yatta, which gives me an expandable totem bar for easy access to all of my totems, and also gives me a customizable totem macro, which allows me to pop down my 4 selected totems by simply hitting the macro 4 times instead of say, using 4 different buttons.

Different people play classes in different ways depending on how they spec their character. That will dictate a lot about your playstyle.

Totems are useful at instances / raids with alot of people. You should just ignore the totems and go with windfury and dual wield or two hand..

It might be late but I'll throw my two copper worth in.
It all depends on preference of play style. You like mixing it up in melee? Go Enhance. You wanna nuke mobs from a distance? Go elemental. And if you just like to party and keep people alive. Go resto (which is best saved for endgame if you want, hard to level with that talent spec.) Now as far as totems go, it's best to use them if you don't think you can handle your target easily (in pve). The Magma Totem is a good DoT while you pummel away with your weapon (or weapons if you dual wield). The Healing stram stotem really isn't too much help over all but there's been a few times the extra mana from my Mana Spring totem has healelped me get off one last heal to outlast my opponent. Strength of Earth helps with melee damage, and grace of air with armor. So again if you take on an enemy who you think might be a little more tough than you, drop em. Stoneclaw is good for a brief crowd control if you have one or two adds on you (I manage to handle the adds pretty well if they are my level or a little higher until I get about 5 then I'm toast) Earthbind is always good for those pesky mobs who like to run when they're about to die and is also good for slowing people down in pvp. Same goes for frost shock. So yes, totems help, different ways for different situations.
