I've heard of this strat but have never employed it myself or seen it occur in a run I was in. I always figured that the whelp spawns would come murder the healer. I've never understood the appeal of this method though, since healing the drakes never seemed like a huge part of the encounter.
Yes, healing with a green drake is cumbersome. You can't use grid/clique or healbot (unless you specially set it up somehow), so you are stuck targeting the boss, putting up DoT stacks, targeting a pet frame (which is usually, in itself, a cumbersome thing to do), then channeling a heal. Then your heal damages your own drake, so you need to make sure your stacks stay up on the boss, and that you don't damage your own drake too much, and.... it's just a mess. So I guess there's the draw to healing off the mounts, when you can just bomb normal heals into the drakes and heal for more than a green drake could do anyway. These days though, the Drakes have been buffed so much and the fight nerfed so much that healing really isn't a huge factor.
Honestly though, the "easymode" version of the encounter these days is for everyone to just take Bronze, channel 3 for a few seconds then hit 1, then channel 3 for a few seconds and hit 1. As long as all five people are not in sync (which, really, how likely is that going to be), your 1 attack will fill up other people's 3 channel-stacks, and vice verse. Throw out a Time Stop shortly after the start of the fight, and shortly after every Run Away phase. He'll be dead in no-time.
I've even heard of groups just taking 5 Red Drakes and just spamming away at their high damage attack and rotating around Martyr and Evasion. It really is just a faceroll encounter these days. No reason to try and be fancy with having a healer off of a drake.

In the run away phase the spheres only chase the dragons, nothing else. If the dragons are flying high enough the healer won't be hit by the spheres' AoE. I often do it that way, but you will need a red drake to take care of the whelps.
