Warlock. They are a really fun class and you will see real numbers with destro at 80.
I loved leveling one, affliction makes you feel powerful, you can take 10+ mobs at the same time if you handle things right.
To keep me motivated... I guess I had really fun just leveling and picturing myself at 80, and sometimes when you think of rerolling/ is just tired of leveling you can always change to destro and shoot things up with 3 spells (although, it's a pain to level as destro). One more thing that kep me motivated was just new spells and new talents (I promise, it's a wonderful feeling when you get haunt)

Im working on a druid (lvl71 now) and that has been fun for me. He's dual spec'd so he can kitty dps and tree heal. Sooooo versatile.

Honestly I have had the most fun leveling a hunter because you can pull tons right from level 10 , you never die unless your nub and questing is easy, you dont even have to fight usually I just send my pet in and loot stuff and skin !@#$ then ill help my pet out.

My problem is that I enjoy leveling(questing) instead of raiding. I'll flex my epeen a little, currently 5 80s with the 5 other classes in outland. Almost every proffession past 400. Only one has stepped in anything past heroics. My suggestion on leveling alts would be to get out of the "its a race to 80" mentality. Get on you main to do your dalies or raid then hop on your alt. Kick back and just have fun. No hurries considering you will probably re-roll anyway when Cataclysm hits.

Well since you hate to level here is a list of classes and how easy they are to level. In order from easiest to hardest.
1. Death Knight - They start at 55. They get some nice gear and a free mount.
2. Hunter - The easiest class in the game to level from level 1 and they are quite fun to play as well. You get your own personal tank, you barely take any damage, very fun in low level battlegrounds, and are quite simple to play.
3. Warlock - Similar to Hunter they have their own personal tank, they take little damage(if they level with the blueberry/felguard), great in battlegrounds(dot-dot-dot-tab-repeat), and unique mounts.
4. Rogue - They can deal lots of damage as well as stealth, steal, gank lowbies, and gank more lowbies, really fun class if your a d-bag.
5. Warrior - Very quick levelers with little downtime. Plus they can handle alot of mobs at once.
6. Mage - AoE grinding kings. Spec frost, round up alot of things and spam blizzard, rinse and repeat. The only downside is all the drinking but you make it up by killing alot of things at the same time.
7. Druid - Slow levelers until level 20. Once you get Cat Form everything is pretty easy.
8. Shaman -
WINDFURY! FROST SHOCK!
. Shamans have alot of big crits and tons of totems at your disposable. Very fun class
9. Paladin - They start off slow but once they pick up you'll be 2-hitting everything, plus prot is really good at AoE grinding.
10. Priest - The slowest levelers of all the classes but a very strong and versatile class in itself. Shadow is a great leveling spec and Holy and Disc offer a large variety of healing/supportive spells. Plus if you're Holy or Disc you pretty much have a guaranteed spot in any raid or instance.
