Give me examples on how some of the following races would be death knights.

I need this information from an role-playing perspective. I am considering a few new characters.
Draenei - Didn't they arrive after Arthas did his nastiness to Quel'thalas. What would they have been doing up in Icecrown that would have led to Arthas turning one of them into a death knight?
Gnomes - Why would there be gnome death knights? Weren't they all occupied during the Third War?
Night Elves - recently discovered by the rest of the world, would any have fallen to Arthas?
And there is another question. Does Arthas only have the ability to raise death knights? Or would any of the other lichs, Kel'thuzad for instance, also have this ability?

I'll give you a simple anwser that gives an example on why all races can become death knights. Power.
You don't have to be killed and raised to become a death knight, those who seek power and want it enough will do anything. Some even go the the Lich King, knowing that their soul will be gone but don't care, they only want power. Any race is subject to this corruption, not any race can resist it.

But wouldn't they realize that this would also make them a puppet of the Lich King and they would lose all free will? Or do they think they are strong-willed enough to accept the power and then break away? Would this power be in alignment with the plans of the Scourge? Or would they have other ideas, like say ridding the world of centaur or gnolls or something like that?

Heh, I said my draenei death knight was on a mission for the Argent Dawn into Stratholme shortly after the Exodar arrived on Azeroth, then was captured by the Baron, held prisoner in naxxramas for months (in other word's during the events of the Burning Crusade), then was killed by Kel'thuzad and rezzed as a Death Knight there in the dread citadel. Ended up in Ebon Hold after, and was part of the battle for Light's Hope.

I'll give you some examples that can be seen ingame or through lore of these races seeking power, or any other path that will lead to wishing to become a Death Knight.
Draenei - The followers of Illidan in Outland, and most of the original race from Argus are part of the Burning Legion.
Gnomes - Leper Gnomes, enough said.
Night Elves - One word. Illidan.
As a bonus, Tauren - Grimtotem Tauren.

The Draenei that followed Illidan were akama and his ashtongue broken, the non-broken draenei wanted nothing to do with the betrayer.

Um, people, death knights don't go "Hey, let's be a death knight, Mr. Arthas, turn me into a mindless puppet please?"
All races can be death knights because all races die. A death knight is a warrior that, regardless of what he was in life, is risen by the Lich King to serve his purposes, with very little will of their own. The death knights we play as are part of a chosen few who were able to free themselves from the grasp of the Lich King, and now are stuck in this form, and want revenge on the Lich King at all costs.
So yeah, all races can be death knights.

Also, Night Elves went to Lordaeron iirc to hunt Illidan, Maiev and Tyrande among them.
The Naga saved Tyrande from the scourge, but some of her entourage could have been captured and made into Death Knights.
As for Gnomes, not all Gnomes lived in Gnomeregan, considering there are a few in Dalaran, I would assume that they had other settlements in the north, although they may have been very small.

Yeah, there are two ways to become a Death Knight: killed by the Scourge, then raised by the Lich King or one of his high ranking Necromancers/Lichs, or you go willing to the Scourge commanders feeling disenchanted with the Alliance/Horde, feeling the Light has failed them, or anything along those lines and ask for the gift of Undeath. Most of the Second are the Death Knights we see in Icecrown, those with their minds intact and able to make decisions, serving as commanders and high ranking warriors. Most of the first ones are the mindless foot soldiers, serving the Lich King without thinking.

Wow. I can't believe it's never registered until now. That makes total sense. I'm sure the Scourge must've carried off the various corpses of Alliance/Horde after their attacks on Stormwind/Orgrimmar shortly before WotLK's release. Not only would it be a preemptive surprise attack on their enemy, but would also allow the Scourge the possibility of "recruiting" some of those factions' respective champions. Could it be this is what Blizzard had intended as a backstory for any-race Death Knights?

i really dont get why your making such a big deal out of this
(insert race) dies by (insert reason or faction) the lich king gets a hold of the (insert race) by (insert method) and raises it as a Death knight no big deal really its not like there aren't dreanai gnomes and night elfs around that got killed.

One of the most common misconceptions about Death knights is that Arthas and the rest fo the Scourge were the only ones who could create a DK. Saddly, this is very wrong.
If you look farther back into the history of Draenor and the times of the first attack of the Orcs, some orcs were commanded by a little guy names Ner'zhul, an Orcish Warlock. These Orcs were trained in the art of Dark Magic and it ultimately ended up corrupting them completely. Durring their time in the first war, when one of the Warlocks were slain in battle on Azeroth, they would use a final spell, releasing their spirit and enter the body of one of the fallen human soldiers, reanimating them and becoming Death knights. Although the books describe them as rotting human carcasses with the soul of an Orcish Warlock inside, they were still refered to by Ner'zhul, Gul'dan, Grom Hellscream, and the rest fo the leaders of the Orcish horde as Death knights. This encompases both orcs and Draenei as DKs.
As for the other races, I think the best explaination of how they became DKs was stated earlier.
