I, Too, Like fishing. It is a fun way (and reason) to go exploring.
I would say, I Like that there are different fish in different areas. It makes it more "realistic" But I Do think they should not be a basis for leveling cooking. IOW, I think having a Larger varity of fish in specific areas would help. I dont think the Ocen fish should bein the rivers and lakes, and vica-verca... but having a grater range of fish would be cool.

If you want to catch the best salmon, you don't fish in your local stream. Efforts have to be made to catch the best fish. I like it as it is.

Yeah but it just gets repetitive fishing in Northrend, as much as i love the zones id like to revisit the zones i loved questing in all those years ago.
Ashenvale has a great atmosphere that i feel relaxed in but i can't enjoy my time there because the fish arent high enough ? Its a bit silly.
Then go fish in Ashenvale for the great atmosphere. Nobody prevent you to do that.
Your whole thread is fail because it is like saying "Man, I loved so much Un'goro atmosphere when I leveled, I think it is bad that I have to go to northrend to level up to 80".
I loved Ungoro and still love it and it is why I still go there once in a while. I just travel on my chopper, enjoying the atmosphere (and of course ganking some allies on the way lol).

Two points:
1) Making people go to other zones for dailies will drive most people insane. Hell, I hate when I get the daily in Borean Tundra. I pray for Jewel of the Sewers and Infused Mushroom Meatloaf everyday!
2) If you put high level fish in low level zones, then people will use low level alts to fish up the best fish, which is not Blizzards intention. You need close to max level plus close to max fishing to be able to fish up the best stuff in the game.
I do however like the idea of being able to fish up multiple low level fish at once. I would also like to see fishing boats. Maybe once your skill gets high enough you can use nets to catch multiple fish at once.

This or if ganking isn't your thing just offer to help people with quests its not really hard to find something to do in a low level zone.
