Hey,
I'm far from an expert, but hope anything I say helps :)
I took a look at your armoury and you're going well in most stats, though i'd say your crit is abit low, using Agi gems/chants instead of AP would give you abit of a boost to crit, perhaps that's why the spreadsheet is advising Agi?
Icewalker is what most people use. As far as enchants and gems go, my own personal choice is to gem and enchant for the stats you want. If for instance you have everything AP but have hit at 295, you might consider enchanting your gloves with hit, or changing one of your gems to hit. Although you don't NEED to hit 315, if you feel it's worth it and don't mind losing abit of AP go for it.
I'd offer the same for the foot enchant, if you're way over hit and feel you have enough crit, you could easily replace it with an Agi or AP enchant.
I'd say the bottom line is, unless you're a min/maxer with alot of gold to spend and raids to go to, you should learn the caps, try to aim for them and then gem and enchant accordingly.

simply, if you have consulted a spreadheet, 99% is correct. if you can use it correctly, you have all the answers you will need.

Not much else to offer in the way of advice sorry mate. You know how to gem/enchant correctly, so nothing there really besides what I said before about gemming/enchanting for the stats you want.
As for nitpicking your current build, at the moment you do have way more expertise than is needed. The cap numbers are 315 hit, 26 expertise, I have enough gear myself to do this, but every time I get a new piece of gear I'll try and swap things around to keep as close to these numbers as I can whilst also maximising what I get from other stats, such as AP/Crit. Remember though that unless you go rediculously over cap, then you won't really be gimping yourself, but the stats (hit/exp) will simply lose "value" compared to other stats when it comes to increasing your dps.
Oh also the reson you Crit is low, at least compared to others, would be because of your weapon spec as combat. If you went Fist/Fist or Fist/Dagger, or even Mut spec, then you could increase your Crit by 3%-5%.
Also, unless you're attached to it as a money maker, Herbalism serves no purpose to a rogue in a raid, you might consider another profession such as LW or JC. LW offers you a 130 AP chant to bracers vs the enchnaters 50 AP, JC lets you cut 3 extra dragons eye gems for yourself that offer extra amounts of a stat depending on which you use, eg 68 AP on one gem vs 40 AP.
Anyway, as Coldkil so helpfully and fully explained, a spreadsheet CAN help you make decisions, though unless you're really keen on min/maxing, following along with what I've said should be enough :)
