So I rerolled from Ele to Enh about 4 days ago and have been running the new 5 mans and whatnot for easy gear. I am at the 14% spell hit cap and have accumulated 3 weapons that are all 232 from the 5 man H's. I'm sort of at a loss though at the best combination.
The weapons I've got are
Seven-Fingered Claws
,
Nighttime
, and
Black Icicle
.
I'm currently using the claws MH and the icicle OH.
Link to armory if it helps:

I agree with your decision for MH/OH. The obvious best of the three is the Claws in all aspects, so you want it in the MH, and since the speeds and damage are equal for the other two, you can easily make up for the Haste with a gem or Enchant rather than wasting that on the Hit you gain from the Icicle.

If you are hit and exp capped, and if you put any value in the theorycrafters over at EJ (they have not yet steered me wrong), the Icicle/axe actually gives you the best combo.
Because it is difficult to put the 3 side by side and eyeball the stats, there is a weighting scale that allows one to "score" an item based on relative benefit to the Enh Shaman.
In this case, scores exclude DPS (since it is the same, and the MH/OH differential prevents direct comparison) and hit (since it is not adding value).
1. Axe Score: 237.8
2. Mace Score: 233.9
3. Claws Score: 210.9
The main reason that the axe edges out the mace in this case is that it has two beneficial stats (haste and ArP) versus one (the mace "wastes" one on hit, and has Crit as a beneficial stat)
Basis: EJ Enh gear scoring
Agi: 1.7
Int: 1.7
Attack Pwr: 1
Crit: 1.7
Haste: 1.3
Armor Pen: .8
+Spell: .9
Excluded:
MH DPS: 5.9
OH DPS: 2.5
Hit: 3.1
Exp: 2.6
You could take the evaluation one step further and load these into enhSim and/or Rawr to get some raid simulation figures, but these "guideline" weightings are a good gauge.

Item Comparison Tool Thank you Wowhead
Umm, perhaps I wasn't clear on my intent.
While the item comparison tool allows side-by side comparisons, it does not account for the weighting factors of the various stats. Sometimes the item with the highest agility is not the best choice.

If you know how stats weigh in on your own build, the Wowhead comparison tools can help immensely. Those EJ numbers are for BiS, you have to run your own simulations to get a more precise demand for what you need to improve your own builds.
Seeing that the above player is still rockin some blues and scratching the spell Hit cap, the gauge provided above is not as accurate as it can be for this particular player. Replace some of the armor with T9, and that's when the numbers are more precise.
