I transferred server as prot before dual spec. Granted I hadn't done much on the Pally as I transferred not long after hitting 80. Pretty much only tanked 5 mans etc. I transferred with a new guild already in mind. Didn't get a run with the new guild until after dual spec (couple of weeks after I transferred) - I specced ret as my off spec. Now the guild can't run without me. In the end they had all the tanks and healers they needed. What they were really after was a good mix of dps.
I OT'd Naxx for the first time the other night and did a pretty good job - just to mix up the roles we normally play and to give the off specs trials for those emergency back ups and to help learn the fights from a different perspective.
My point to the story here is that I think it really depends on what the guild wants in the end and what alternate options they need to cover. If they think they may need back up healers - then Holy might be the go. Alternatively, if tanks are needed spec Prot.

Gotta agree with this guy. I'm leveling a pally to get a break from my druid main who is resto. The druid is capable of pumping out top dps in raids but I can't get away from healing, largely due to a lack of healers on our realm.
Spec holy only if you really enjoy healing. It can be fun, especially on new encounters but I find that as the group gets better, healing tends to become boring.
This is just my experience, however. It really boils down to what's best for you and your guild. Good luck to you.

I currently run a Prot/Holy setup.....although, heaven forbid those poor suicidal fools who want me to main heal without my druid.
