However, think about it, why do people multi-class? Because certain multi-class combo's are better than pure classes. But "better" isn't something you want in an MMO.
This unfortunately. I don't want to end up at a point where you have to be two specific classes to be able to effectively do the job you signed up for to begin with.
I played Guild Wars for a while when it first came out - when the mage class (elementalist), with healing as a secondary class (monk), ended up being a far better healer than... an actual healer. It was not pretty.

Resto rogue would be insane...
Unload on someone, stack 3 lifeblooms, vanish, and repeat.
Or a Prot mage... Ouch.
Not a bad idea, but just doesn't suit WoW much.

Many thanks to everyone's input. I was hoping for more input on how to make it work, instead of why it absolutely won't work. Compromises or limitations etc to balance it out.
Of course, this is all in fun and if it doesn't work out, it'll just drop out of sight. Just trying to see how much people are willing to work their imaginations.
I personally think the best way to implement this would be to use the "Stigma" system being introduced in Aion. Every character has 5 "stigma slots"; in the higher levels they are able to find what will likely be rare books/scrolls that teach them how to use another class's ability. I'm not sure exactly how they are limited, but I'm sure that the most powerful of spells aren't available through Stigma.
While it would take some very careful restrictions, it could also make PvP a lot more surprising: What if the Rogue you thought were about to take down was able to burn part of their energy to cast Holy Light on himself? What if a Druid was able to toss out a Frost Nova occasionally?
I would restrict this so stigma spells would be on a much longer cooldown than normal - for instance, maybe restrict it to one off-class spell per combat, and a 5-minute cooldown between using them (with the cooldown timer not starting until you exist combat).

The way they do it in FFXI is what ever level your main class is, your sub class is half of it. So if you are a Lv.80 Warrior, your sub class would be Lv.40. In FFXI I was always Samurai/Warrior.
Except you have to level that subjob, and the only way people in WoW know how to level up is questing.
Which you have already done on your character.

It was worse if your main was a Ritualist. Every class seemed to beat us out at what we did (until they got buffed but that was too late for me), espec. Necros...
I hate to say it OP but I don't think it would work. Just imagine a Shaman/Pally... oh wait. o_o

it would be super hard to impliment without OP-ing/UP-ing certain classes that are already considered "borderline"
Also the whole 80-85 thing gives me pause, thought because traditionally the whole multi-classing thing serves as an option that requires TONS of work to make it as strong as a "pure" class. IE dividing your experience points and whatnot.
With only 5 lvls to work with that wouldnt make the benefits really all that worthwhile it would more like mess up your current build.
Working as a duel-class the whole time however would come off more rewarding. There would have to be mucho limitations though to prevent mass QQ-ing over OP/UP-ness.
