I'm assuming you want two different classes? Nothing will beat two identical classes for ease, and if they're hybrids you can roll different specs at 80. If you're happy with that scenario, either two druids, two shamans or two paladins will work well.
If you're dead-set on two completely different classes, I've heard the melee+caster combination can be difficult to master, mainly due to them needing to be at different ranges (case in point: A priest and a feral druid, priest pulls aggro or gets attacked by a passing mob, cat needs to turn around?)

I dual boxed a priest and mage to 60, double casters make it pretty easy (binded a follow/assist macro key, fireball/mind flay, dot macro/frost bolt, and mind blast/arcane missiles)
I tried for awhile dual boxing a mage and a pally, but the only way I could make it someone viable was to get the paladin to do nothing but heal, but then it slowed down the process (half the possible DPS).
& yes, theres programs that make keys affect both copies of WoW. I personally used Keyclone, but I know theres a whole ton of them that work.

Personally i like the use of a Mage and a Lock. two caster dps in the beginning have similar spells and mana restrictions, Shadow bolt, Ice Bolt a mean combo, not only that but one had ice armor and the other has demonic armor, so you bind all those together and your pretty set, and i make it so i can cast AI on my lock and mage :) Other classes i have tried to DB are: Rogues(Not terribly hard) and Warriors(a little trouble altogether) so i definatly like my Mage/Lock combo
And yes Keyclone is out there it is by far the best/easiest to setup, bad part is it costs 20 bucks, however its a one time purchase and its good forever, until you have to change pc's thentheres a cost to have it transfered. But i love Keyclone, and the best part is unlike stting up macros (Which blizzard is not okay with) Keyclone is legal per blizz's ToS, theyve actually taken the time to speak to Gm's and have SS of the convos. Also all the bindings are already set up you just select which keys you dont want to pass ie: enter for chat etc etc.

If your priest is slacking, set up an assist macro and just wand-spam for the other times.
We're currently experimenting with dual hunters - it's much easier than two different classes.
The other option is to pick classes that don't have much involvement. Paladins make good choices.

We're using HotKey - it's alright? I haven't tried Keyclone, so I don't know how it compares.
Heirlooms make RaF'ing a bit faster, I think, but it's not going to make a huge difference. Quest gear is more than enough.
Just remember to have some cash set aside for your new characters. Nothing burns up cash like having to train, without grinding out quest rewards and farming low level mats.

If you're going to have a "tank" class, I suggest Paladin. Even if it's Ret, you can still turn on Righteous Fury and have significantly high threat. Druid and Warrior's tank stances both have a loss of DPS and a loss of certain DPS abilities. Paladins can still use all their normal abilities, just with higher threat.
If you're going to have an actually heal-specced healer sidekick, either Disc. priests or Shamans have the best "set and forget" abilities.
After next week, finals week, I'll be starting RAF with a Pally and either a Priest or Shaman.
