I know your and my opinion differs slightly on the value of Stamina versus Agility. That said, I'd add these to the list:
GEM
+4 agility/+4 stamina
ENCHANT BRACER
Fortitude
ENCHANT CHEST
Exceptional Stats
I recently picked up the tanking staff from SSC and unfortunately had to change both my shoulder and head enchants to compensate for the loss of Defense. I really didn't want to re-gem my stuff, though; so, there wasn't much else I could do. Defense gems are annoying to use, as you've said. I've noticed the difference from losing the Expertise from the Earthwarden and the Melee Hit from the head, enchant -- not a whole not, but it is definitely there. I have a few Heroic Defense/Dodge gems in my bank that I might look at replacing something with. I really don't want to, but missing stuff is really not something I can do frequently (as you've also discussed).
As for the HP thing ... I've enchanted and socketed almost solely for Agility. Chest, Feet, gems, Weapon (granted, that's the only option, there), Back (that's not necessarily a complete list). While, no doubt, I would've had more health if I had favored Stamina, I was MTing Karazhan for a friend's group last night and with what were effectively raid buffs (PW:F, Kings, Warrior shout, Imp) plus Stamina food and some elixirs, on the Prince fight I was sitting at just about 19200 health. I didn't look, but I imagine my dodge was in the high 40's and my armor was somewhere around 32000-33000.
I feel like my health is adequate even with the selection of Agility over Stamina in a lot of cases. The additional dodge certainly helps with nearly everything as long as the healers get used to healing with pretty significantly high dodge.
I may eat my words, someday :).

Part 4: Gearing Options and Strategies? :)
You could probably pull a few of the sections from the other 3 and either shorten them and link to the big one or just remove them to Part 4.
EDIT:
I see you've added some of this stuff into 3. I suppose the gearing can be split off into the respective sections to which they apply. Considering the way this would be read, I'd say that's probably better anyway.

Hey Nabterayl, once this gets really fleshed out, what would you say to me copying them over to the druid wikispace and/or wowwiki in some fashion? It's all very well written and a quite nice initial and post-initial overview. I'd hate to see it get missed :).

Sorry for the OT, but :I'm still working on balance and resto sections too (work has just picked up a bit, so it's slower going).I'm up for helping on the moonkin part (proof-reading, comments and whatever else you might need/ask for). You did some great work for the feral side and having the same for other specs would be really nice.
