Hopefully my advice hasn't come too late to be put into consideration.
The biggest and most important thing you can do for her to learn how to play as a hunter is to:
A: Let her die.
Maybe not at this level, but as she gets higher in level, the amount of gold she'll end up spending on repairs and the like will tip her off that she's not doing something right, especially if she's complaining about being poor. I started off horribly, dying right and left because I thought 'Hey, I have melee attacks, I must be meant to melee too!', completely ignoring the fact that I have pet that's supposed to take the beating instead of me.
B: Have her PuG instances without you
Once she's been kicked from a few dozen groups for wiping them, she will either get the point that she isn't a tank, or cement the decision to reroll her to a plate wearer. After a few /kicks, I learned that I'm not supposed to melee under all but extreme circumstances, and I learned to use Feign Death anytime I saw a mob running towards me, which leads to my next point.
Have her partner with a hunter who knows what they're doing
This helped me the most. My Guild Leader is a hunter, her husband is a hunter, and damn good hunters at that. After 3 BRD /kicks in a row, she ran me through with 3 other 70s to show what a hunter is supposed to do (but with less likelyhood of me wiping us). I learned a LOT from watching her, and it helped me see my next point.
Make sure she knows Feign Death is her friend
After all my adventures as the ever-dying Huntard, I cleaned up my game and got good enough that my guildmates saw no problem with running me through Shattered Halls at level 64 ( 6 levels lower than the dungeon level). I had a horrible aggro radius, pulling some mobs on accident, but because I would use FD, we never wiped. This goes hand in hand with making sure she knows about Disengage to get out of range of targets after Feigning.
If she doesn't 'get' Hunters after this, I say you may have a fine warrior/paladin/DK tank in the making
