In general I'd agree. Any of the combat point classes are a bit more challenging than others so if you're looking for something a bit more demanding feral druids, Muti rogues, etc are good choices.

The most skill-based would have to be probably fury warrior, IMO. It requires knowing what to do and when, and as a melee DPS you have to keep your bearings at all time.

Id say when I play my Ret Pally, I am Always moving, and mashing numbers. I tend to always be on my toes if I am putting out my Max DPS...
My main is a Mage - and in some PvE and PvP situations, you stay pretty busy because of the different spells - but in Paids, it's pretty much follow the rotation.

Though I agree some people stare blind on the easy rotation and the following of 1 proc...to bad they don't know that knowing WHEN to use heroic strike is key, it requires having a feeling for it and the only way you get that is by practise. As a furywarrior doing average DPS isn't hard, maxemizing it is next to imposible, I know f.ex. I made 2 mistakes on our first Archimonde kil, that's maybe 5DPS but it's a mistake non the les.
Kinde like that, some classes can have the perfect rotation the majority of the fights, since WotlK I have yet to avoid hitting 100rage(=DPS los)

No one's mentioned Mages yet?
Since my main is a mage, I'll add in that they can be hard, if you choose to play them that way. They're incredibly squishy, and you constantly have to be thinking defensively, since a few hits from a mob will wipe them out.
Frost mages aren't hard, it's just faceroll icebolt spam. However, fire mages and arcane mages have specific rotations, but you must be constantly watching your mana during each fight to optimize DPS.
For arcane mages in raids, for example, the goal is to end each boss fight with no mana left. This means that if the boss is dropping faster than your mana, you should through in more Arcane Blasts, sacrificing more mana for the extra damage. If the boss is dropping slowly, you may want to cut back. Factoring in Evocation cooldowns and Mana Gems/Mana Pots, they do take some thought to get optimal DPS.
Or you can just spam the same rotation over and over. As above posters have pointed out, skill is necessary for several DPS classes to get optimal/top DPS, but most of them can also be facerolled and survive.
