Well, I'm a 70 warrior and would like to spec to dps for pve. My warrior is my first character to level 70 so I have some questions.
While leveling up I was always arms spec(but I'm currently specced more for pvp: arms/fury), so I've gotten us to using two-handers. But now I'm wondering, is Arms a viable DPS spec, or is dual wielding as a fury warrior much better for dps purposes? I prefer arms, as I only need to get one decent weapon versus two, but if you guys think Fury is superior for dps, I'll respec.
yes and no - depends on your playstyle, if you prefer the slower, generally higher hitting, then go arms - more sustainable DPS is attained by going fury, especially raid DPS wise.

Yeah, it seems that they're making arms more pvp and fury more pve with the moving of death wish to arms tree. That was why I was thinking maybe fury is better pve dps.
theres no doubt AT ALL that fury is the pve tree - even now, its clear cut

Ok, thanks on the advice guys, I think I will respec fury. Another thing I started to notice is that it seemed that all the DPS plate gear has +hit rating on it, and a fury warrior could make better use of that than an arms warrior could... (i think)
yes, very very very true - also, don't be afraid to take leather items if it's an upgrade to you...until you hit 25 man content (gruuls, SSC, TK and beyond) theres not many options for plate DPS gear, a few, but not much. the leather gear has massive +hit and you need it if you want to maintain your DPS

False. All you need as fury is 9% hit minimum, pump the rest into AP and crit. As soon as your AP and crit are at viable levels you can start acquiring more hit. I've tested it myself, as long as you're not decked in BT epics, prioritise AP (Str that is) and crit over hit, without forgetting your 9% hit need. 9% hit makes yellows never miss (in effect, your main nukes like BT, WW and HS), and high AP and crit keep the rage flowing in, even if you still have 15% miss with whites.

if you were referring to my post - sure, that 9% hit for 'yellow' mobs is sufficient...but by getting more +hit...for bosses you will be hitting more (OBVIOUSLY) therefore doing more damage - myself (as fury) i have ~250 +hit which is about exactly what you should be looking to get. after that, stack str (for AP) and get some crit, a decent amount of crit, with raid buffs (no lotp) i have 31% crit which is enough to keep flurry rocking at all times.

9% is the miss cap for yellow attacks, meaning BT, HS, WW, and Cleave, which should be the only 4 attacks you should ever find yourself using as DW Fury. This doesn't mean you should totally ignore +hit after 9%, though. Personally I'd say around 180 - 200 minimum, and then after that prioritize AP and Crit over +hit. You should NEVER gem for +hit. The socket would be put to better use with a Str/AP/Crit gem.
2h DPS is viable, but only with Imp. Slam and a Shaman in your group for Windfury. The trickiest part of 2h DPS is timing your Slams so that you will not reset your swing timer. However, 2h DPS is generally not up to par with other classes; most high-end guilds only bring 1-2 2H Warriors to raids, and mostly for the 4% damage debuff.
