So I got my death knight to 80 a few months ago. In the meantime, I've been grinding reputations, getting gear, doing dailies, and lots of fun things. I absolutely love the Argent Tournament dailies (which may be a sign that there is something wrong with me), and I enjoy the 5-mans and some of the 10-mans I have been privileged to do. And there is still much to accomplish.
But I am getting tired of the whole DPS thing. I don't know how to tank at all, so I'm hesitant to gear up for that and then go suck horribly. Many of the bosses these require more than just simple tank and spank, which raises the challenge even more.
I've got two characters capable of healing (though I've never healed before other than myself), but my hesitation is thinking of all of the stuff I've done on my DK even after hitting the level cap. On the flip side, championing rep and getting into groups would be easier as a healer.
So, I am torn.
If there wasn't so much fun stuff to do end game, I'd have just stopped with the DPS role months ago and gone to a healer then.

I agree with marineman001, give tanking a try you may find out you "suck" at it or it could be your niche. You'll never know unless you try, I know thats what I would do.

The other thing you can do if you want to try tanking is to try to get a pretty good tank set by rolling on offspec gear in 10 mans and heroics, then find a healer you know and like and do a few normal five mans. If you do a little bit of research beforehand, and you have a healer you know is pretty solid, you should be able to do alright in some easy five mans, then you can just work your way up through heroics as you get the hang of it. If I was you I wouldn't force myself to stay DPS just because I'd already set up my character reputation wise and everything; it will seem more fun doing that all again on a new character or trying to learn a new role from scratch than it will sticking with something you aren't really enjoying because you've sunk too much time in it not to.
Edit: I realize this is sort of a flippant piece of advice, but if you really don't want to grind all kinds of rep again, and you don't want to give tanking on your DK a try, you could roll a human alt to make the rep gains faster.

What kind of defense should I be looking for to start out doing some of the lower level Northrend raids, like Utgarde Keep, for instance. At what point do I
need
to have 540?

535 is considered necessary for heroics, 540 is necessary for raids. There isn't any kind of game mechanic where you get struck down as soon as you set foot in an instance with less than this but you're generally considered a terribad tank if you do. For normal five mans, you don't need to be uncrittable. You need decent, tank specific gear, especially for the later five mans, but as much defense as you can manage, even if it's not 535, is plenty for dungeons usually, as long as you have a good healer.

Thanks, pezz. I have been saving some defense gear just in case I ever decided to try it. I have six or eight slots worth lying around somewhere. I've got somewhere around 500 worth, if I recall correctly.
