BS/JC will give you the most amount of stats.
JC is becoming less tempting with epic jewels coming into place but that doesnt change the fact that JCs get their meta requirement for free. They also have some really nice JC only trinkets.
If you like engineering go for it. It's awesome for PvP and by far the most entertaining profession.

You mean that a JC doesn't need the "2 red gems and 1 yellow gem" to get the benefit from a meta gem?
They still do but they get 3 prismatic gems that count as all of the three gem colors towards activating your meta.
Or you can just go to the dude at the Ulduar (inside) entrance that's sitting on the back of an ogre and click repair.
Sounds like a very time efficient way when you're wiping on sapphiron.
Dont forget the mailbox that comes with engineering. Or the engineering only pets.

It's ultimately your choice why you want to pick up a profession. Mine is to have cool stuff and have fun :)

Don't. If you are even remotely interested in endgame raiding, don't. The benefits are horrible, far worse than other crafting, even gathering professions. Take JC and be happy with it.
Me, I am JC/Engineer. Used to be Miner/Engineer. Now I have mining on my alt, and enjoying the bonuses of JC immensely. Why then engineering? You see, this paladin was my first char. Mining/BS used to be the professions. Then at level 20-something I dropped BS - it was too hard to level, nothing I could make would be tempting to equip. Ran with skinning, for some time, then herbing. None appealed for me. Then I saw the goddamn explosive sheep. Grenades. Fun stuff.
By the time I got to 60, TBC was out. Then I started looking more carefuly at gear, and lo and behold, the epic goggles. Since my TBC raiding peak was couple times in MH (pre-3.1), those were damn good. Then I got some spare cash (from mining) and traded in my gryphon for the flying tractor. Life was good, and thre was even the occasional glimpse of sunwell goggle recipe on AH (but for far greater sums than I could afford). Recipes piled up, some of them quite rare. Motes brought in some respectable cash too.
Then, WotLK came around. I was raiding then, and repair bots were absolutely awesome in the wipefests that ensued. So, I leveled to 80, then sank all my cash (and the ores I had gotten from mining, could have made a small fortune on those) in boosting engineering to max. The results? Horrible. When I finally got to goggle level, found out that they blew chunks in comparison to BoE BS ones. That I already had. Only good thing that came from engi was the knife. I had so many from skilling up that I armed majority of my guild with them. Oh, yeah, the chopper too. First in the guild, wooo, one of the first in server.
Now, I have considered dropping engineering many times. No real bonuses for raiding. No one even needs a repair bot now - at least two people in raid group have the mammoth. But in the end, it's always the same - I look back on how goddamn much time and gold has gone into that thing, and I just can't. The closest I came was when I dropped my other profession - mining - for JC. Just can't bring myself to throw all that time in the wind.
TL;DR - I am too weak to drop engi because of how much effort went in skilling it up, but you can still avoid my mistakes. BS/JC is the way, Mining/JC if you don't have bottomless sack of gold.

That stuff hardly sells, the epic guns are now around 600g tops when the mats to sell as raw mats is around 800.

Also when you mention the fun stuff the critter enlarger never made the game, gathering proffs are better for their the extra stam, crit or self heal. I used to be an engineer myself and would pick it up again in a heartbeat if it was viable, but as it currently stands even tailoring is better then it even if it is only for the carpets that unlike engineering mounts don't cost a ton.

Depends alot on your server economy.
On 4/5 of the servers i play on the guns are still worth crafting and selling. On the last one they're definately worth crafting for a fee (cant see why they wouldnt be anywhere).
Hunters are always going to need the heartseeker scopes.
Mana/healing injector are very very worth their while. (Why do you think people pay 1200 gold to haris pilton to get 2 more bag slots?)
The arrow/bullet makers, once again hunters are always going to need ammo.
The tonk controllers sell like butter in the sun on most servers cause they're fun like hell.
And the gnomish army knife usually sells for atleast a couple of gold and the mats hardly ever cost more.
Engineering is more than viable. If you use your grenades on cooldown that's another ~30 dps increase and alot more if you're fighting several mobs.
Gathering profs are not better than engineering if you're going to argue their viability in end game raiding.
