as blizz has done away with crafter only gear and opted for crafter only perks i wouldn't choose a prof for making your own wears but for the perk
all 80 crafted gear is now boe meaning "why should I level this slightly inferior profession when someone else has already done so and another profession offers better perks and more business?" poor decision on blizzard's part imo
as our class is the epitome of hybrid our best choice is clearly JC/BS providing in most cases superior stats but also the benefit of maximum customization granting stats other profs can't while being able to mimick the perks granted by other profs if you choose and having a superior market than some other professions
just remember, while the class is a hybrid
we
are only hybrids till we choose a spec

I don't see how having enchanting would be a good choice, as you can get enchants by simply buying mats and finding an enchanter. Leatherworking seems to be slightly better, because of LW specific enchants. In my opinion, the best professions are JC for the superior gems, engineering for pvp utility, or alchemy for an endless supply of flasks, elixirs, and mana/ hp restoring pots.

I don't agree there. Blizzard knows this and that's why the perks are very well balanced. Yes, JC/BS might be more configurable and by giving 40 agility instead of 80 AP as bonus they have a totally minor advantage of 8 effective AP or something like that. But seriously, the difference is so incredibly small there really is absolutely no point in picking a profession for that.
Any crafting profession will do. Any crafting profession will give you a tank, physical dps and caster bonus. All those bonuses are well balanced, there are minor differences between them but they are so small that even a single gem will make more of a difference then the profession choice.
So you should chose a profession neither for its perks nor for the power of its BoP crafted items. The reason to chose a profession is the utility it provides. Like lockpicks for BS or being able to enchant/disenchant your own gear without having to run to an enchanter. Or cool looking mounts as tailor or engineer.
You need any two crafting professions so you get two perks. Which ones those are doesn't really matter so you might as well pick two professions that are convenient for you.

i never said character sheet perks, just perks in general which can be anything you see as a plus you otherwise wouldn't have without that profession.
Stats, convenience, mobility, pets, mounts, income, access to locked doors/chests, filling a desired roll in a guild's community, what little crafter bops remain (though none are BiS), etc can only be obtained from a profession if you train it yourself which is what makes them crafter only while with the elimination of crafter bop gear (almost entirely) you can get the exact same crafted gear as anyone else regardless of your professions.
So once again i stand by choosing a profession based on the crafter only perks rather than the gear.
surprised this thread still pops up from time to time
