At what point do I sacrifice spell damage for stats?

I would think that more spell dam = more mana returned to you and your party members so +dmg all the way.

A mages priorities are such that we go for damage, then crit, and then hp and then the other stats for pve. Switch crit and hp for pvp is my personal thing.
As for where the balance point is, just get the items which come naturally. Blizz has done a lot to fix spellcaster itemization, and so the best items are going to come with all the requisite stats. As a general statement, have a look at iLvl of an item, and decide from there if it's balanced enough for you.

With the changes coming to Priests in 2.3 where 1/3(supposedly) of your +healing goes to your +Spell Damage, you might have a better time if you try to get gear that has a lot of +healing to it. Then mix and match some items to augment the other stats you need.
I am not saying to disregard the other stats though. Just find that happy medium between the gear you pick up and then get some +mp5/mana or whatever enchants and gems that you can get easily.

What about +hit Skyfire? Casters need about +26% hit rating vs a boss w/o talents, or else everything you do is going to get fully or partially resisted.
For Shadowpriests the importance is: 1)damage, 2)+hit, 3)profit
Im sure Aff-locks would agree to an extent, b/c we dont need crit. also b/c either our talents provide our only 2 critable spells with +15% crit or the spells cant crit (dots/channeled)
But Destro Locks/Mages/lol-kins/Ele Shammies/Shockadins would need good crit...
Gah! +hit should be capped if possible... I'm guessing you meant 16%. Um... I think that would go under damage in importance for PvE, and just about non-existent for PvP.

You won't, because +healing isn't 1/3 of the item cost of +damage - it's only 1/2.
Getting +healing gear purely for the +damage side benefit will only make people laugh at you.

It's a nice balance, because it means that pure damage players will go with +damage always, while healers go with +healing without having to collect a seperate set to be able to solo decently. Very good change, if you ask me.
Moral: cap your +hit, then focus on 8~9k health and as much +damage as you can muster.
What he said ;) Though I'd aim for 800+ spelldamage first of all, if you don't get there, all the +spellhit in the world is not that useful.

7,740 is just fine. Your main task now is to get as much +shadow as is possible. It's easy to get over 1k shadow damage pre-raid with tailoring. 3-piece Frozen Shadoweave and 2-piece SpellStrike, loaded with +9 damage gems, would be a huge improvement. So long as you're in the 7k mana range and have no problem dropping potions and timing your shadowfiend, you'll be fine.
When the xpac first started many of the top shadow priests had only 7k, some even less (they used incredibly-rare +dmg bow blues that had no other stats). When I was raiding myself I had 7200 mana, but I also had 1100 shadow damage which made up for it.
While it's true that some fights stamina is important, overall damage is the most important. There's nothing wrong with changing out gear according to fights. You always have the option of keeping both bracers and swapping in the Nefarious Deeds for fights where you may need some additional health.
So, TL;DR:
- Stack damage, damage, and more damage. If you can get an additional point of damage, do it.
- Don't be afraid to pop potions. The PVP ones are silly easy to get and finding other sources of non-alchemy pots isn't too difficult.
- Your mana pool does not matter. If you're sporting the very best of pre-raid damage gear you'll still have over 7k, which is more than enough to be effective in raids.
- If acquiring mana potions is difficult, you might want to talk to your guild about having the guild bank help pay for them. Remember, you're regerating mana for your entire party, which is effectively making it so they don't have to use mana potions. The number-savvy guild leaders will see that giving a shadow priest a stack of potions is the equivilant of giving their raid dozens of potions.
