in terms of itemization/gearing are probably easier to satisfy 'post' lvl 60.
yes, my apologies, been very busy lately... it's the exam periods, I just have wowhead open at the side for quick viewing, i will have a completed version hopefully before next year.
in terms of other stats to stack while AoE grinding to quest/lvl...it looks to me that there are two options.
Stamina and agility, with a side of int.
Strength, for some dmg.
(also adds to block, and this is in terms of dmg blocked or rate of block, again?)
Agility, for some avoidance, etc etc
you don't need threat for AoE grinding, and str. doesn't add enough block value (the damage absorbed btw) to be useful. However, agility will add dodge chance, so take "monkey" over "bear"
Stam I'm not worried too much about as long as my mana pool holds. and pots are cheap on my server, I don't mind carrying around 100 of them for regular use.
if you compare health to mana, it tells me you're healing yourself... either you're taking too many mobs or you need a bit more experience, also try using lower rank pots as well, it's a decent alternative.
I've got thermaplugg's core and that Steelclaw Reaver with crusader, and they server well (although the proc on that shield is so low it's almost laughable) and a Skullflame sitting in the bank for future use.

I wouldn't bother with skullflame because I find that the fastest leveling method is tanking instances in tBC, and your items get really often replaced if you instance half as much as I did, at level 68 I found I had better gear than most level 70's who I met (excluding end gamers)
should I be nixing most of my +defense greens and start stacking some more str/stam/int?

stam, agi, side of int and defense ratings
you don't need to worry too much about gear or defense while leveling imo
