Is it really necessary after close to 5 years with wow to define before a run that tank drops are rolled on by potential tank classes, not a clothie? A priest has no business rolling on a mail/plate items ever, it shouldn't need to be defined specifically before each run.
It is when there's the possibility that any one of the 5 people in the party hasn't been playing for 5 years. It could be that it's their first MMO, possibly their first instance run ever. That isn't going to change until Blizzard stops accepting new subscriptions - which ain't ever gonna happen until the game is dead.
There are also folks who believe that the Warrior shouldn't be allowed to roll on tank gear because he wasn't tanking, so it should have gone to the tank by default. Depending on the run, I've also seen the "roll for a friend" bit - and it was accepted by the party beforehand so no one could complain about it.
So yes - I think it is still necessary. Assuming can wind up with someone being the first three letters; in my opinion, it's best to spell it out explicitly so there's no room for complaint.

This is why you have to spell out the loot rules beforehand. What was a Priest (cloth wearer) doing "needing" on a piece of mail anyway? That shouldn't have been allowed to begin with. They were both in the wrong and you were right. However, that doesn't always make things good. You got the piece you wanted but had to be aggravated in order to do so. Depends on how much you care what these two think of you. If they are just players you don't know then just put them on "ignore" and move on. If they are guildies it's more of a problem and if they are real life friends-oops! Now you might not have friends who will play WoW with you. But they weren't being too considerate of you so it went both ways. I would say initially you were right and they were jerks but then you went on to give them a tongue-lashing afterwards so you evened the score.
I guess it comes down to choosing your battles carefully and be prepared for anything to happen.

So you start every run with "Okay, listen up, cloth users may only roll on cloth, our healer priest should be focused on int, spirit and mp5, warlock should be.....blah...blah.. blah..hunter should roll on mail items with agility and attack power, but not strength, unless he's below 40 in which case he can roll on leather with similar stats...blah....blah...blah..paladins...blah...tanking role..."?
No way you're going through that every time.
Actually, I do - not so much for heroics anymore, since I don't need gear from there, but for those where I do (like ToC) and raids, I definitely do. It's nowhere near as complicated as what you say: I, and most of my friends, say at the beginning of any run where there are pugged people: "Main spec gets need, off spec gets greed, if no one rolls need or greed, then it's an open roll."
If people don't understand those, then I take the time to explain what I mean by main spec and off spec.
You can believe what you want. It's what I do, to avoid situations like this.
So you are telling me that there are people out there that accept going on a run where everyone rolls need on everything and the more friends you bring, the bigger the chance of getting loot? That's the bottom line of "rolling for a friend", the more friends you bring, the better the odds.
Stop dreaming up situations just to try and win an argument.
I could care less about "winning an argument" against someone I don't know. I'm telling you what my experiences are. Said experiences aren't any less real simply because you believe that I'm dreaming them up.
The same rules apply as I stated above - main spec needs, off spec greeds, then open to all - but if it comes down to an open roll, it's not uncommon for people that I know to roll on the item and then say, "Give it to X - I'd just sell it."

It dropped in SM...you could easily get a friend to boost you for the item without this hassle.
However, if this was an epic item (226 item level or higher) I'd have done the same.
But this is petty loot, I think you should have just forgotten about it.
