I renamed and rewrote this introduction to avoid the lore-fight that was brewing.
The Light kicks Arthas' ass all over the place. Some people believe that the jewel in the Ashbringer is the core of Naaru, either way it is a piece of concentrated Light. The Light is always seen as the counter to the undead. We have a race of beings made out of Light.
Why couldn't A'dal just go to Icecrown and wipe out the Scourge?
Lore aside, the following is the Lich King encounter featuring A'dal, Hand of A'dal.
The raid would go like this.
/invite A'dal
A'dal has joined the group.
A'dal has joined the raid.
Raid: hai wut quest we on
Raid Leader: We're doing Icecrown Citadel. All bosses down but Arthas. We've wiped like ten times, so you better not suck.
Raid: iz gott gud geer
Raid Leader: wtf? You don't even have an armory page. Oh well, we'll summon you.
Raid: Summoning now.

Raid: wait
Raid Leader: on Phase Two when he starts swinging Frostmourne...
Raid: F'n wait man. He's just wearing whites.
Raid Leader: What?
Raid Leader: wtf, I think I'm bugged. It won't kick him.
Raid: chillax bros
Raid: i got dis
A'dal casts Redemption on Arthas.
Arthas yells: What the HELL? I'm the goddamn Lich King! You can't rez me!
Raid Leader: wtf, A'dal? you can't rez a boss. he's undead anyways.
Raid: hey Rawrknight, you know how your Death Coil hurts your enemies but heals undead allies?
Raid Leader: yeah
Arthas yells: Nooooooooooo!
Arthas dies.

Raid: l8r gais

Actually, I'm pretty sure in the quest A'dal says he CAN'T cure the plague, but is going to take Bridenbrad to heaven, Elijah style, so that he doesn't actually die because of it and become undead.
"Each give their boon to help save Bridenbrad. All however end up purifying Bridenbrad, but not cleansing him of the Plague. Sadly he dies, but A'dal shows up and promises he'll live "Not a soldier of Undeath, but dwell in Paradise for the light takes care of their own"." That comment pretty much describes it right.
I did laugh, but thought you would like to know what really happened.

You have a good point. However, I'm pretty sure it has nothing to do with my point. Whether or not A'dal can cure the plague or not, Arthas gets wtfpwned by the Light at Light's Hope Chapel. The reason behind the Ashbringer is to fight the undead with the Light. The Wrathgate shows a paladin walking around a few seconds longer than everyone else. Probably because the Light gives a little resistance to the plague. We have a race beings made of concentrated Light. Thus, the little story about the Arthas encounter.

This is true, but this race made of concentrated Light cannot fight. So A'dal can't come and just own Arthas. He can only delegate the power of the Light to corporeal beings and then watch and hope they win the fight. The Light is very powerful against the undead but its power can not be enough at times.
Also, as Kiyateo said, A'dal didn't cure Bridenbraid from the plague. Well he did in that sense that after his death, Bridenbraid didn't turn into an undead, but the plague still killed him, and the Naaru claimed his soul so it could not be claimed by the Scourge.
