I would go with what your server is lacking. My server at the moment is filled, FILLED with hunters but lacks mages. Instead of spending time looking for a tank or healer for heroics and raids, a good number of parties spend their time looking for a good sheeping (or pigging.. or turtle-ing) mage.
I suppose if you're not worried about looking for a group, go hunter. It's been called to be the best solo class and as a hunter myself, I love playing her. ;D
Or make a mage and move to my server. ^^
