Bad thing is you won't get truly great performance out of headphones straight out of an iPod/iPhone. It largely depends on the performance you want and your budget, which I see is $100 or less. Also, do you want on the ear, around the ear, canal phone, or in the ear (ear buds)? I have a low-end hifi headphone setup on my computer that was about $700 so as you can see, headphone systems can get VERY expensive and note, I said mine was lowend of the hifi spectrum. Also, what are you going to be listening to? Also, do want to add any sort of amp to your system? You should be able to find a nice set of phones for $100 or less and probably even throw in an amp as well.

What kind of headphones are you looking at? On the ear, around the ear, canal phone, or in the ear (ear buds)?

I have tried the bose noise cancellation head phones. They are really nice but not worth the $100 imo. I settled for a pair from guitarcenter.com that sound almost as good for right around 30 bucks. heres the link.

I use them for my zune, wow and guitar amps.
