Well, get rid of both your trinkets and trade them for anything else, but I understand that's why your running HOL. Find anything else for that 2nd trinket at least.
Get rid of the ring that had no defense on it.
For the most part start searching on wowhead blue level-80 gear, usually you can find most fair blues before heroics doing that.
Your spec to me is "meh" at best imo. I just don't like giving up some stats in protection for deep wounds. The spec I typically use is

Get rid of the glyph of whirlwind and cleaving, useless imo, just use a rotation on all the mobs and you won't need cleave at all. Whirlwind is plain useless. Replace the glyphs with like Glyph of revenge and glyph of vigilance.
For those mobs, in HOL those first few mobs some of them jump back auto-matically and you can't stop it, EVER. You'll just have to use charge on them and have the mobs that don't do that run to you again while you shield slam that new guy

Since you're a Blacksmith/Miner, I think you should be able to craft the Titansteel Shield, Helm, and Boots. Also start to enchant your gear for Stam or Defense. Since you're starting out, aim to replace those Green items asap, esp the rings and trinkets.
Noob Question...
about three pulls in, those hunters w/bows keep staying off of me. I would get one in range, the other would knock me back w/an arrow so then one is in melee range and the other is shooting with an arrow again -> rinse and repeat. How do I get/keep them all in melee range?
The only other thing I don't really know is how to turn someone around without showing my back. Some fights require this.
I just ran H HoL last night and it was a smooth run. For those hunters, they are spaced about equa distance apart. You basically want to charge and land in the middle of the pack, and then use thunderclap to get their attention. There's generally a small dwarf caster among them too, use your Heroic Throw on them to silence them and get them into position. If they are close to you in range, they will all cluster up so you should be able to TC/Shockwave them, and Cleave them to keep them on you.
As for your 2nd question, I'm not sure what you mean. You can taunt someone from 30 yards away without having to face them. The mob you taunted should turn and make a bee-line to you. As for positioning, I wouldn't worry too much yet about turning your back on mobs you are tanking. Most of the trash and even bosses you can safely turn your back to all the way up to Naxx. I believe you start to worry about turning your back to mobs once you get to Auriaya and her adds in Ulduar.

Deep wounds is still the REAL tanking spec, you lose nothing by specing out of it and into prot.

Yes, 3% block is nothing.
^^this. although i prefer to have 4/5 shield spec for more rage generation and drop cruelty altogether.
as far as having to run away from mobs, you need to learn to strafe effectively. i can't think of a situation where i can't strafe instead of turning my back.
