You will always have MP problem in PvP, every healer has much much lower mp5 in pvp gear. Can't tell what your problem is, because i don't know your comp, what groups your struggling with, etc. If it occurs every fight then you are probably over healing or something.

if you are forced to fully hot both yourself and your partner
you will go oom pretty fast
it is a known technique used to counter druid healing
if you have enough resilience you can use some spirit gems and with living spirit 16 spirit gem = 18 spirit
which is almost 18 mp5 when not casting
i would say not to fall bellow 500 resilience

I'm currently running with a mage who has a simmilar gear setup to me. roughly 500 resil atm. We have the set but are working on the rings neck ect. would it be worth me looking into somthing less squishy to keep up?

Yes, ret pally would work better for you, but you are honestly low on resil. You want over 700 resil or you will have to fully stack to stay alive. I have pretty bad gear on my resto set and am over 600 resil, and getting close to 700, and still have issues with dieing if I don't fully stack(but I honestly don't much care for PvP healing these days).
With druid/frost mage, your whole goal is to completely lock down one of the other team, and kill the other. Typically, CC the healer, and kill the dps. You should be rather strong against melee dps if he's frost, but frost is also pretty hard to play correctly.
