Wound vs. Instant... I don't get it

In trying to compare my resulting dps on dummies, I really don't see much of any difference between the two. What am I missing here?

The difference comes with the proc chances and the damage done. Instant poison and wound poison are both normalized to a 1.4 weapon speed, so you can work out the increased proc chance with a little bit of math.
When you work out the total damage done by poisons over 1 minute, Wound will do more damage than Instant if you don't have Improved Poisons maxed out.
Mutilate Rogues also have even more reason to use Instant than Wound, since the buff from
Envenom
gives more IP procs.

It depends on your spec. If you're running Combat/Subtlety, you want to use Wound (main) and Deadly (off). Deadly allows for heavy sustained dps in the long run, and Wound has a higher base dps because of the proc rate. Eviscerate is used because of the slow rate of application of Deadly Poison.
Due to Master Poisoner, Vile Poisons, Improved Poisons, and Cut to the Chase in the Assassination tree we have to change tactics. Vile Poisons increased all poison damage by 20%. Improved Poisons increases the proc rate of Deadly Poison by 10% (40%) and Instant Poison by 50% (70%). Master Poisoner increases the effects of Envenom of inflicting Deadly Poison by 45% (totaling 100% proc during envenom) and 75% for Instant Poison (>100%). Plus, using Envenom means we refresh the duration of Slice and Dice to the 5cp maximum.
tl;dr
Non-Assassination: Wound/Deadly, use Eviscerate.
Assassination: Instant/Deadly, use Envenom.
