Common prio list:
Hit (until cap, 8%) > Expertise (until cap, 26 expertise)
>
Strength > ArmPen (if you're blood) > Crit > Haste
That should give you a rough estimate of what stats are "better", many people however, go for +str in all sockets no matter what colour :P
The value of ArmPen differs greatly, Blood Dk's value ArmPen much higher than the other specs and since the penefits of ArmPen isn't linear, it's hard to distinguish its exact value :>
Also make sure to pay attention to if the socket bonus is offensive or defensive, sometimes It's worth socketing 8+str +8crit to get that extra +6 str/crit/hit/Armpen :)

Sure it's ok to have, but as dps you should never be hitting a target from the front. 3 reasons. 1 You can be parried which equals your tank taking increased damage and lowering your dps. 2 You can be blocked, which decreases your dps again. 3 Breath/cleave. Expertise only affects parry/ block. If you stand behind a target you will never be blocked or parried which makes expertise completely useless. Notable exceptions. Thaddius and a few select other bosses. As DPS get expertise if it comes on an item already, but don't go out of your way to stack it.

Expertise is an attractive stat because it can be seen as the "second type of hit".
You're also a bit off, Expertise reduces the chance of your opponents to Parry and dodge, it doesn't affect their block chance.
It's value differs greatly depending on what specc you are aswell. For instance, a blood spec that's mainly based around Physical damge thruogh DS and HS should gain a more greater benefit from Expertise than, say, a Frost/Unholy build that's more focused on magical damage.
But since DK's have a fairly sensitive rotation, missing one strike can result in a much higher dps loss than you think.
In conclusion, Expertise is ´better´/on par with strength, depending greatly on your spec.

Thanks for the clarification on the dodge part. But my point still stands that if you stand behind the boss you need will need 0 expertise. How many fights do you actually attack the boss from the front, not enough to make it worthwhile to stack expertise I would think. Mind you I have only been into the first 4 bosses of Ulduar so I could be wrong. But in terms of all the other raids I can only think of thaddius.

Even if you stand behind a boss (which ofc you'd normally do) it can still dodge >_>....
Dont underestimate expertise, it's a stat that should look attractive to you on gear, and arguably (depending on gear levels) something that's better/on par with strength for socketing.
Edit: Damn these coloured letter you have to type in to make a post! Darkdog beat me with some seconds I tell you! Seconds! ;)

Thanks I actually was lloking this up and just found that out and came to make that adjustment, 214 expertise for the dodge cap for a duel wield is what I read, so after 214 expertise it is not nearly as good. Sorry about that.

Not sure about the rating but at ~26 expertise (not rating) you've reached the dodge cap for both DW and 2-h vs raid bosses, above that it becomes more or less useless =P

Its not useful for anyone but a tank to go past 26 expertise (and even then stam would be a better stat most likely)
Yea i hate those new colored letters it always takes me a couple of tries

The soft expertise cap is 21, which is the dodge cap, and the parry cap is 26. I'm currently sitting at 24, without gemming or enchanting for experitse. 4 pieces of gear with expertise on it, and almost capped. With a gem/enchant or two I could hit that cap, without losing any hit.
