short answer: yes
longer answer: yes you can easily find pugs as prot warrior. theres no "better" class to tank.. warriors require a bit more practice if you wanna be good at aoe tanking though

As a first character it's my desire to create a tank, the stand out in front, holding the line guy while everyone else knocks him down. Being guildless and lets be blunt, not having much of chance to get a good guild for awhile, I'm going to have to rely on Pick Up Groups to advance my gear. Question simple, As a Warrior am I going to be welcomed into the appropiate leveled instances to tank? Or is there a better choice?
First of all, welcome. Now my question is do you want to tank because you WANT to be a tank or because you think it's easier to find groups? I would say that if what you really want to do is dps, than that's what you should aim for.
It depends on your server, but at the moment tanks and healers are most needed. You will definitely have an easier time finding a group as a tank than another dps. It's sorta the opposite for 10 and 25 man raids though. There are only 2-3 tank spots for those and its easier to join a Pug raid as dps.
Also tanking requires you to spend more time, effort, and gold on your gear than say dps. People want the best tanks they can get usually, and if you are slacking on gear they might wait for another tank to be available.
My advice is to join a guild that is at the same pace as you, and do what you WANT to do. It's a game, don't be foreced to play a role you don't like. There are plenty of guilds out there always looking for skilled players. It's better if you have a passion for the role you are in, and try to be the best at that role than to fill a role just because its easier to find a group or get a raid spot.

you are doing the right thing.
you have a strong desire to be a tank, which is a good sign.
you are leveling as prot, which is a good idea on your first toon - you should be pretty well skilled by the time you get to 80. yes it's slower, but don't listen to people telling you to switch.
if you're the appropriate level, i don't know why you wouldn't need a tank for any instance, including deadmines.
i don't agree with your profession switch though. mining/jewelcrafting is a pretty powerful tanking combo at end game, and not something that's fun to go back and level later.
herb/alch might be better for leveling, but it's not worth it in the end. find a kindly soul to enchant you with crusader instead.
