He's no-one special really lore-wise, bar his role in the Quiraji Invasion.

Broxxigar, Sarfaung's brother, is a much more interesting, powerful, and lore rich character. Look him up.
As for the High Overlord, he is an war leader for the Horde, and played a great part in the opening of AQ. He was one of the people that rallied the troops, and planned a strategy with the help of the Cenarion Circle.
In WotLK he acts as the leader of the Horde forces in Northrend. You can find him in Borean Tundra, usually arguing with Hellscream Jr.

There's a bit of lore in all those comments.
Varok Saurfang is the brother of Broxigar the Red. It was he who stopped Sargares the Great, Dark god of the Nameless Void from stepping through the Legion Gate 10,000 years ago during the first invasion of the Burning Legion. Had the Well of Eternity on Azeroth fallen into the control of the legion, no world in the universe would have been able to withstand the Legion's Burning Crusade. Not to mention, the old gods would have been freed from their eternal prison, which is he well. Just as Sargares was about to step through the Legion Gate, Brox jumped from the back of Soridormi, Nozdormu's prime consort, into the Legion Gate being transported to one of the Legion Homeworlds. The in a matter of moments he slaughtered hundreds of unsuspecting demons as they were preparing to step through into a conquered world. Sargares himself then moved to smush out the little orcs flame. Brox had other plans and with his last breath he hurled himself in the air at Sargaeras striking him in the leg just above the knee actually wounding Sargares. It was this wound that allowed and distration that allowed Malfurion and Illidan to close the portal on Sargeras before he stepped through the Legion Gate, banishing him to a void between the nether and the world. Brox's life was ended by Sargeras, right before the demon entered the portal, by the jagged edge of Sargeras's broken sword, Gorribal. With his dying breath, Brox sealed his place in history as the only known mortal to have wounded the Burning Legion's leader.
Broxigar the Red died, not a mere honorable death, but was struck down in a blaze of glory nearly unheard of in the history of the orcs.
When Krasus returned to the present day, his first act was to take Brox's magical axe, which he had found washed up on the shore of the well, directly to Thrall. Disguised as an orc shaman, Krasus told his tale of how Brox helped stop another demon invasion, and implored the Warchief to sing songs of Broxigar the Red, his legendary life, and his glorious sacrifice.
Now, his brother, Varok Saurfang, leader of the Kor'kron, the most elite of the Hordes Warriors, holds his name in honor.

I wonder how there is no official religion with SAURFANG as main and only deity. But WoWWiki has it all, I believe - his leadership during the war against the Qiraji is the only thing he's done in public. If you don't count public executions of entire raids, that is.

The executions are general knowledge.
I still think Brox > Saurfang, just on the simple fact that he wounded Sargeras after piling up demon corpses into a mountain in the only direct assault on the Legion (unless another has happened in recently), without any help.
He died, but then, how many people would have even gotten as far as WOUNDING a god (or god-like being)?
Quite a few. Grom Hellscream most recently (killing Cenarius and all).
Sargeras is a whole new kettle of fish, hes a Titan.

Brox is merely a manifestation of Saurfang's awsomeness. And he's not dead, but Sargeras is.
