Leveling up for a death knight.

If you are brand new to the game, I'd offer the following:
Professions: I would pick up 2 gathering professions (typically either mining/skinning, which worked great for me, or skinning/herbalism). Sell everything you gather to make some gold to finance other things. Later on, if you want, you can pick up a crafting prof and power level it.
Class: If you ultimate goal is to play a DK, I'd still try to find a class to play up to 55 that is still fun. If you are into DPS, you certainly could do warrior or mage. in my experience (which isn't a lot) those classes can tend to have some amounts of downtime (drinking/eating) between fights, but really, ultimately, it is about what i fun for you. Is it more fun to bash someone's head in with a sword, or throw balls of fire and ice at them? The trip from lvl 1 to 55 will still take some time. if you play a class you don't enjoy you are going to have a very rough time sticking to it.
About any class should be fine for leveling. most people say hunters are the fastest, but i'd think about any would be fine, as long as you are enjoyign yourself.

If you're just leveling a character to hit 55 and get a DK, I'd say warlock or hunter. Affliction warlocks can pretty much level forever without eating or drinking because of drain/siphon life, life tap, and healthstones.
Here's how you level super fast with an afflock:
1. gather up your "kill 20 whatever" quests.
2. go to the area where your whatevers are.
3. immolate > curse of agony > corruption > go to next mob
4. repeat until you're low on hp/mana
5. loot while your hp/mana fills back up
6. turn in quests
You can seriously average 2-3 levels per hour just doing this. I hear hunters are fast too but they have to worry about weapon skill and ammo, and are exceedingly boring until you get a pet.

I've found hunters and warlocks to be the easiest to level due to pet aggro. DKs are no doubt a powerful class but really not a class that is all that hard to play. I'm one to level a toon then proceed to the next class. I currently have 4 80s under my belt with a few more sitting in the 70s and then a couple lowbies. Its really about what you like, I'm not a big fan of end game raids and what not but I do enjoy a fair amount of world PvP. If your intention is to get to 55+ asap by questing then a pick a hunter or lock. If your going to be spending most your time in instances you would be better going with a class that can either heal or tank but middle of the road so you can still quest solo.

They get there pet at 10, thats less then 5 hours of play time (I wouldn't let that be the determining factor on playing a hunter).

DKS are awesome, but so are the other classes. Take your time leveling up, and once you get to 55 you may want to try a DK out, but who knows? You may like your current character too much to even bother.

Warriors are a bit difficult to play and level up because they have no means of healing themselves. While a mage can just conjure some food (most of the time he won't even need to because he never gets hit), a warrior must learn First Aid and use a lot of cloth to make bandages (which is a huge loss of money) and Cooking, and you will have to buy your food (another huge loss of money) and carry it around (loss of space in your bags = loss of money).
Also, warriors are squishy when they don't have a good gear. And if you're new to the game, you won't have fantastic gear, unless you pick two gathering professions and make good money at the AH. The economy in WoW is 4-years old, all the prices are inflated, and especially gear prices. Mages don't rely that much on their equipment. You can level in starting greys and whites just fine.
I have both, a warrior and a mage. I leveled my mage first and it was a breeze, I was frost specced, things died faster than they could even reach me, I could solo elite quests.
Then I leveled my warrior, and it was hard. You're fine if you pull only one mob. If you pull two, you start sweating and praying for dodges and parries. If you pull three, you run for your life. Elite quests? Not without a group. I had to eat every 3 or 4 mobs. Yes, my gear sucked. But because it was hard, it was also fun.
This all was a very long time ago, and both classes received huge buffs for leveling since then. But I still guess that if you want to level fast, you should make a mage. And spec him frost, too. Frost has an insane leveling potential. You never get hit. You almost never have to drink (when you get mana gems and evocation that is). You can survive AoE pulls and you will even look for AoE pulls if you have improved blizzard.
End of the story, I love my warrior. :p

Ok, I know this sounds weird, and by the way, thanks for the advice, but are portals a odd reason for wanting a mage? I mean, I am looking at talent calculators and all of their abilites from 1-80, and a warrior just seems in my opinion better than a mage.
Able to take more hits, a physical powerhouse. Don't get me wrong, a mage looks fun, but having to look over your shoulder a lot isnt my style, I am twitchy enough as it is and being able to charge into an enemy group just seems more natural. To me, a mage seems more like an indirect playstyle because you need to keep your distance.
They have a lot of tricks to stay out of combat or rescue themselves, but something in me is telling me that doing massive physical damage just feels right, any thoughts?
I'm the same way. I was a warrior first, and then switched to a death knight. I've gotten so used to wearing plate and taking on multiple enemies at once, I don't think I could play as a class with weaker armor.
