Going engineering for the sole benefit of the goggles would not be in your best interests. That aside, the actual cost for majority of 1-300 Engineering is relatively low.
Alchemy without PVE aspirations would be next to useless.
Blacksmithing is a great profession, but if you're not interested in the weapons it would be ill-minded to pursue weaponsmithing. You probably wont' need armorsmithing for PVP, either.
Two gathering professions are the simplest route & easier to level now than at later levels. You have a mount & you're in low level areas...I see no reason not to take professions that will both make money and outfit your "main" if you plan on going Inscription with your warlock in WLK.
The downside is you'll be unable to level your profession until you level your alt.

I'd stick with Bsmithing. Hopefully Blizz wakes up in WotLK and give good BSmithing recipes that are at least on par with PVP gears. Obtaining enough Primal Nethers and Nether Vortexes is god awful for epic BSmithings. Not to mention mining is one of the worst profession to lvl.

bulwark of ancient kings is the better than the s3 chest piece in PvE, but it seems you only want PvP stuff. That stuff almost all comes are BGs and Arenas.
Enchanting you could get for 4 to all stats on rings and all the resilience enchants.
I am BS and enchanter, but I wish I chose JC instead of enchanting now to get the better gems and that awesome tanking trinket.
