How far over hit caps should I go?

Hello all.
By the way, this question is in relation to a dual wielding enhancement shaman. Could you please give me a pointer as to whether have this right? I understand that the benefit of stacking hit over the 7.5% mark diminishes very fast so that it is only worth hitting the soft cap where yellow attacks are at 0% miss. Also I read that stacking expertise over 7.5% (0% chance of dodge) similarly is not worth it. Why is this? Is it not worth stacking expertise beyond 7.5% so as to reduce the chance of parry as well as dodge? Should I keep both caps as close to exactly 7.5% or allow my expertise to go over?

Mobs and players can only parry attack that come from the front. As a melee DPS you should always be behind the mob, so the mob will never be able to parry anyway, so no need to put extra stats in something you don't need.

Ah yes, I see what you mean. Though when not in groups hitting at the back is not an option. Also, does anyone know of a source for the numbers re the DPS diminishing returns from stacking expertise beyond the expertise cap?
Recount is showing that melee is up there as one of my main contributors to my DPS. I was under the impression that it should be insignificant compared to my special attacks so is this likely to be simply a reflection of me being a bit ^&*! at my priorities/rotation or is that normal?

Expertise always gives the same % per rating.
As for your damage breakdown, look at it this way: 40% of your damage (random number) is from auto-attacks and stuff that happens by only auto-attacking (WF and FT procs). The other 60% is from the abilities you effectively use. So that's quite alot.

Basically the point of not going beyond the hit cap is the fact that those stats can be allocated elsewhere.
Once you hit the hit cap, you can start reforging your Hit/Exp stats into other secondary stats which will increase your overall DPS more than if you were to keep increasing your hit.
