Who else gets tired of all swords being 1H?

All swords aren't 1-handers, I think, because I distinctly remember there being a 2-handed Swords-section here on the site.
Jokes aside, I don't think there's a problem. In general, I think Swords were overdone in earlier expansions, and there is the potential for a lot more to be done with Axes than Swords. In my opinion, anyway.
Also, please put a little more effort into your threads in the future. One-liner threads generally aren't appreciated around here.

I actually want more axes and less maces.
I still haven't gotten to transmog anything into my Arcanite Reaper.

It would be neat if they allowed a wider variety of transmogs (2h -> 2h, etc)

They allow Bow -> gun -> X-bow so I don't know why they don't allow 1 h to 1 h, or 2h to 2h.
Indeed. I don't think it's too complicated to program =P

I tend to like swords better, too. I find them more aesthetically pleasing. I'd like it if blizzard loosened up the transmog restrictions, and just made categories (like they do for hunter ranged weapons- bows, guns and crossbows are all interchangeable). It would be nice for there to be some leniency in transmogging to different weapon types as long as they were both either one or two handed items.

After using an axe for the majority of Cata, I'll take a mace or a sword. They allow Bow -> gun -> X-bow so I don't know why they don't allow 1 h to 1 h, or 2h to 2h.

This, so having to use a certain type of weapon wouldn't matter, you could make it whatever you wanted.

IN EQ2, there was actually a second equipment window, and you equipped your appearance gear over whatever your actual armor was (and if you left a slot blank, your regular gear was what showed. There didn't have to be any correlation between what you were wearing and what your appearance armor and weapon was at all.

What axe? The only weapons my Arms warrior ever got were maces.

That really needs to happen and happen stat. I'm not asking to be able to transmogrify my plate shoulders into cloth or my Axe into a gun. Just ability to do what you stated.
I think part of the problem is QA because not all weapon types have animations for all class specials... they've got a procedure in place to test art for a given set of paths it takes around the various character bodies, but they'd have to develop new procedures for the other combos. This is part of why Titan's Grip can't be used with polearms or staves, since they'd have to create new animations for them.
So it wouldn't be "just a few hours of programming," it'd be a few weeks of creating new test procedures and applying them retroactively.
... and there's better things for them to spend their time on.
That said, I've always wanted my warriors to *always* use Spinal Reaper because, come on, Spinal Reaper. Since leveling a monk, I'd also sure love being able to do polearm <-> staff. It really seems like a 2h agi weapon being categorized as one or the other is often arbitrary.
Except... not. If a class can't use a weapon, they can't transmog it. And that would really be the only reason the animations wouldn't exist.
Beyond that, most class specials use the same animations regardless of weapons.

Pretty much this.
In the case of Monks (due to Jab), Rogues (due to Mutilate, though it's definitely possible to use the mutilate animation with other weapons, since Stormstrike actually is a similar, if not the same, animation), and Fury Warriors, make it like this:
Have Monks use the jab associated with the weapon transmogged to (harder to do), or normalize the attack animation to what staves are right now (which is punching people, from what I can tell)
As mentioned before, Rogues can use other weapons for the Mutilate animation and the weapon requirement is more about restricting Rogue weapon choices (assuming on the latter part). For swords, specifically, you can essentially duplicate the daggers animation for it.
For Fury Warriors (or just Warriors in general) remove both the Staff and Polearms proficiencies. It's not like they're exactly in use. Maybe they'll do something about it but until then...
