A casual Gamers return

So I have been away from WoW since pre-raid Cata. I used to be a rather hard core gamer, taking part in non stop dungeon cues, learning how to max out my Shamans DPS and prepping for raids and doing what I could in Guild Raids.
I eventually left because of a non stop childish berating from other players through whispers and random dungeons, I.E., Why do you have that glyph, or You should have that gem, etc. The other reason I left was when I started up my store all my time and money went into that project.
Things have settled down and I have decided to come back, but solely as a casual gamer. I want to keep working on my pet and mount collections and also some achvs here and there.
I also have to fight that addiction (yes I was addicted to the game, sometime 10+ hours a day) and I think playing it only during downtime at the shop and being a casual gamer will help that. I also have my Fiance keeping track and making sure I take breaks. WoW has so much that I like and like everything, I must learn moderation.
With that said, I had a few questions:
#1: New Talent system! I am at a loss! I want to make my Shaman viable for deceant dps, but no clue what to do with him. I have to relearn so much and re-do my entire hotbar system.
#2: What are your recommended add ons for casual gaming? So for I have NPC scan to hunt down the camel statues and some rare mobs. Maybe an auction house one? what are some good ones for mount and pet collecting?
#3: With the new mounts/pets being shared will my mounts from my horde toon count towards my alliance toon and vice versa? If so I need to make a Ally toon and grab all their mounts and up my count! (I'm aware they can not ride x-faction mounts)
#4: I have a decent set of older healing gear, but don't think I'll keep it. Should I just sell them and open up the bag space?
I'm sure I'll have so much more to ask and discuss as time goes on.

Thank you for the input! For question #3 what I meant was, If I have a 108 mounts on my main horde, and then go over create/lvl/buy all the ally pets, will my total mount count go up?

#1 Sorry- I am no help with Shamans, but I second that you should look at noxxic. For specific questions, there's also the Shaman forum on Wowhead.
#2 I recently switched from auctioneer to auctionator, and it's a lot less bulky, seems to be better at remembering how I post individual types of items, shows me the pricing history over the last week (which I find useful) and in general makes posting much faster. I still tells me what things DE into too, so I'm not losing any of the functions I used in return for the added speed and streamlining over auctioneer.
I recommend Decursive too- if you plan on doing dungeons, it makes it much easier to watch for and dispel the things you need to in group. My friend recommended a new Pet Journal one, which I can't remember the name of, but that's supposed to add other filters to make sorting easier. Pet Journal Advanced, or something like that, maybe?
#3 For total unique pets achievements, I believe it will count faction-only pets, since they do show up on the list when you are on a toon of the opposite faction- you just can't summon them.
For mounts, the ones from other classes, and the other faction, don't even show up on your list. The only ones that will transfer over will be the non-faction-specific ones.
#4- I would keep the gear, especially if you plan on healing dungeons on your way to 90. When I level, sometimes it takes a few levels to get a replacement for a certain slot. It's better to have a pair of healing gloves that's a tad outdated while healing, than an empty slot or a pair with agility.
