How can I cover all of the professions?

One thing I will add though, personally I like to have a dedicated gatherer.
I have herbalism and mining on my druid. (I only use him for gathering)
I second this, my tauren druid is also my dedicated Miner and Herb gatherer.
I have also grown fond of my DK as my main skinner. AoE all teh things then skin zem ^^

While there's not usually a "recommended class" for specific professions (I know a lot of people prefer druids for gathering) you do get certain bonuses for certain
races
versus professions.
Gnomes get +15 engineering
Blood Elves get +10 enchanting
Draenei get +5 jewelcrafting
Worgen get +15 skinning (and no knife requirement, and faster skinning)
Tauren get +15 herbalism (and fast-gathering)
Goblins get +15 Alchemy
This can mean that you can learn some things a bit earlier or that the skill-up range may be a bit skewed for recipes.

There are 8 crafting and 3 gathering professions, 11 in all. That requires 6 characters and assumes your gatherer(s) do so for all classes that need the mats. If you limit this to 5 characters then something has to go, most likely skinning* so you will have to buy mats for LW.
If at all possible do as Archibolt and Entropyutd indicated and make a Druid your gatherer. Even before you hit 60 and get flight form you can get to a lot of nodes by using cat form and stealthing in.
*Mining feeds JC, Eng, & BS. Herbalism feeds Alchemy and Inscription. Enchanting is fed by disenchanting (i.e. mostly self fed) and Tailoring is feed by cloth drops (fairly common). Skinning is pretty much limited to LW and thus feeds the fewer professions than the other two.

I personally run my professions like this:
Hunter:
Leatherworking/Engineer (I'm rich enough to sustain this and it's a little more optimal. This character initially had other professions)
Warlock:
Tailoring/Enchanting (High profession synergy and cloth is good for a Warlock)
Shaman:
Herbalism/Inscription (Another profession setup aimed at synergy)
Druid:
Skinning/Leatherworking (Not sure why I have two Leatherworkers - you only really need one of each major crafting profession. The profession synergy is good for a Druid though).
Paladin:
Mining/Blacksmithing (High profession synergy. Paladins benefit from plate equipment)
Mage:
Herbalism/Alchemy (Not sure why this character still has Herbalism. May switch it later. Profession synergy is decent though.)
Death Knight:
Mining/Jewelcrafting (Has mining because I tank with my Death Knight a lot. Profession synergy is strong too, though I never could find enough materials just through casual mining)
By this point I have all professions covered.
Priest:
Enchanting/Alchemy (double crafting professions for optimal play. One can never have too many alchemists and enchanting can be convenient to have.
Rogue:
Mining/Engineering (I think I have too many miners. Engineering is a nice profession to duplicate though).
Warrior:
Alchemy/Engineering (double crafting professions again. I personally think this is the best setup after you have all professions covered.)

a lot of good input, i'll give my 2 copper.
i have a main (warrior) that has bs and jc with all secondary proffs at 525. i have a clothie that has tailoring and enchanting. the rest of my toons all have at least 1 gathering profession. i have one last alt that runs fro the bank to the auction house to the mailbox.

I would recommend that you make sure your tailor is a spellcaster (i.e. magic dps or healer) and your leatherworker is a physical damage dealer (i.e. melee or hunter). This will let you take advantage of the cheap leg enchants they offer. Other than that, who gets what is largely unimportant. There aren't usually a whole lot of BoP items anymore.

You don't need the knife anymore to skin, and regardless they ALWAYS had to have a knife to skin on live.
Yeah, worgen originally were able to skin without knives on Beta, but that was removed before Cata launched & traded for "faster skinning."
