Hey there.
I'm having some trouble.
Leveling is overall seen as fun, to me. However, I hate leveling in Un'Goro Crater, Terrokar Forest and pretty much all of the Cataclysm zones.
How do you guys get past a zone you don't like? Personally, I am trying Winterspring instead of Un'Goro Crater and I am figuring out a way to skip Terrokar all together.
Do you have any similar troubles when leveling? Terrokar is boring, Un'Goro has awful quests and all of Cataclysm has you doing 1-2 quests at a time, compared to doing 10 at once and turning them all in in a single round.
Lemme know what you think.

If you don't want to quest in a certain zone...Don't.
If you dislike the Crater, head to Felwood/Winterspring, or Burning Steppes/Blasted Lands instead. If you hate Terrokar, spend a little extra time in Zangarmarsh and go to Nagrand at 64. If you hate Hyjal well....can't really suggest Vashj, since I hate that zone with a passion heh; guess you can just run randoms till 82 and go to Deepholme at that point.

I used to enjoy leveling in Un'Goro before Cata. The zone was so unique and I loved the atmosphere. As for outlands, I always skip Terrokar while leveling, my usual route is Hellfire, Zangarmarsh, Nagrand, and Netherstorm.
And I also have to agree that with the new questing system you only get 2-4 quests at a time, and I am constantly running back and forth to grab more quests. As crazy as the old quest system was, I did enjoy being able to grab all my quests, go out into the zone, complete them, and then return to town to finish any chain quests.
With the new LFG system I pretty much sit in SW the whole time anyway. With heirlooms and so much xp bonus, I tend to outlevel a zone before I can complete it. And I'm currently working on loremaster, with Azeroth bring the most boring compared to Northrend and Outlands.

Well, I am a little confused about what level you are currently at since you are talking about Un'Goro and Winterspring which are low- to mid-fifties zones, Terrokar which is midway through Outland, and then the recent Cata zones, which are 80+.
As others have stated, if you intensely dislike your optimal questing zone at the moment, then you must find alternative means of leveling past it:
You can queue for random dungeons. This is even better now since dungeon quests are located at the entrance of each instance, which adds considerable xp and possibly nice gear upgrades.
Queue for battlegrounds to break up the monotony of just straight questing. Be aware of your level though, since being at the bottom of the bracket means it won't be that fun.
Sometimes you can find an alternate route through an expansion. For instance, most people never hit Terrokar when leveling through Outland nowadays. Dungeons level you very quickly during this stage, and you could stick with Hellfire Peninsula and Zangarmarsh and then skip to Nagrand, especially if you intersperse the questing with dungeons.
If you have a gathering profession you can farm mats to either level a complimentary crafting profession or just sell them for gold. I know when I was leveling some alts in Cata that herbing and mining gave some good xp while I took a break to farm.
At certain level ranges you may want to break away to do some dailies. For instance, once you hit level 77 you can start doing the Argent Tournament dailies for mounts, pets, gold, gear, etc. and the quests (and mobs you kill for certain dailies) will net you xp.
Set little mini goals or challenges for yourself to help you push through. For instance, research a good gear upgrade for a slot where you are currently lacking and find the quest chain leading up to it and go after it. Or research a pet that you can obtain through a certain quest chain. Sometimes the carrot works and before you know it you've gained another level.
There's some suggestions to work with. In the end though, remember to just have fun!

As others before have said, you have to decide what you want to do and what alternatives are best for you.
For myself, I am currently leveling a spriest on the horde side and having just leveled a rogue up to 80, I am dungeon crawling through outland levels as I have leveled 6 toons over the last 6 months O_O.
I will take her through questing in Northrend while queuing for lfd as I enjoy the LK areas a little better than BC ones. Once I get her to the Cata zones I will only queue a normal once for the quests and then quest my way all the way through the Cata zones.
The reason for stopping the rogue and starting the spriest is that the new horde side guild wants a spriest for the MOP raid team, so I will go there. I have a full load of alliance side toons 85 priest, 985 mage, 80 paladin, 36 hunter, 85 DK, 85 rogue, 85 lock. 50 druid and 22 warrior. I have only 2 horde side the 80 rogue and the 68 spriest which I am working up for MOP raiding, but I do enjoy the leveling process.
The bottom line as also has been said do what is fun to you, otherwise why play the game?

The good thing about those zones is that there are other places you can choose from that are still appropriate for your level.
If your like me and really don't want to grind through zones anymore because you've gotten burnt out on the questing deal, que for dungeons. If not dungeons, battlegrounds. Or you could twink out your toon and just keep it at a set lower level.

Dungeon delving or battlegrounds will definetly level you faster if you're tired of the zones but farming is good for those in between or solo times. Mining nodes and picking herbs. It gets tedious but xp is xp and if mindlessly mowing down mobs in your path to the node does not bother you that's extra xp and extra chances at rare loot. It's also a chance for some sight-seeing. I try to pick zones that I haven't seen in awhile but are quasi-level appropriate for the time because, otherwise, there'd be no xp gain. Turn up the music and see if anyone's in /general or /g to trade jokes with to break up the monotony :)

You get much better gear from random dungeons than you do from questing.
Once you get to Outland, which is a truly godawful nightmare in terms of quest structure (or more precisely, a lack thereof), you can just head to Shattrath and do dailies there in between dungeons. Then when you hit 70, you can do Quel'Danas dailies between dungeons.

Um...what? The only dailies you can do below 70 in Outland are the ones to claim the towers in Terrokar, the pvp one in Hellfire and the PVP one in Zangarmarsh; all other Outland dailies unlock at level 70: Ogri'la, Skyguard, Netherwing(which needs Epic Flight training) and the Isle.
