As a preface, I want to point out that I am about as average a player as it gets. I lead an average raiding team that does relatively well, but has no desire to be our realms top raiding guild. I strive to play as best I can, but I am under no illusion that there are better players than I.
For as long as I have played this game, I have always been an advocate of playing what is fun rather than what is "best".
For that reason, I have raided as a Fire Mage for a long time, even during times when we weren't on top of Arcane or Frost. I also play with around 400ms due to my recent relocation.
From what I can tell from your post (please correct me if I'm wrong), you seem very critical of yourself. It is no doubt a good thing, but only once you have developed a certain amount of thick skin.
The best advice I could give at this point is to concentrate on yourself for now - ignore the others - ignore recount/skada. Until you have mastered your own rotation/priority, anything else is just a distraction. This is how I feel whenever I DPS on anything but my mage or hunter - I need to concentrate extra hard on my own spells because I am not as familiar to them as I am to my mage's.
As far as guild goes, I would look for a friendly, less progression orientated raiding guild. If/once you do find one, I would be honest about how you may not be the best out there but are prepared to put effort in to improve. As an officer, that is about as much as I ever ask for in my guildies - as long as we see hard work and effort put into a character, we can live with the temporary lack of DPS.
As for keybinding vs clicking. I am a keybinder. One of my best DPS/Tank is a clicker. It is as simple as doing what you feel most comfortable with.
As an example: My keybinds are mostly 1-4 with Shift, Alt and Ctrl as my modifier keys. I use a mouse that has 2 side buttons, and again those are bound to modifier keys as well. So that's 21 spells that I can easily get access to. Depending on your class and spec, 21 should be more than enough to cover the important spells. The rest don't necessarily have to be bound.
I am very used to playing this way, and I can say that having tried to play my character on a friend's computer (without my mouse and keybind setup) I felt very lost and uncomfortable. All that to say that you need to find what suits you best, not what is considered best.

from my experiences, every dps spec has 3-4 main spells that create the most damage output. there are then cooldowns, trinkets or other spells that boost these 3-4 main spells. you normally have to read forums or websites that get an explination on how they all work together.
now some things to think about. if you are attacking one target, a spell that is used for multiple targets will do less damage and vice versa. if you hit a cooldown but cant cast the main spell, the cooldown is wasted. if you gear is not as good as other players around you, your dps will naturally be lower. its the end of an expansion, most active players have gear that is high level, and gemmed, enchanted or reforged for best output. finally, keybinds and spam clicking does help. oh and pvp is tough, it takes a lot of practice and you tend to use a lot more spells depending on the situation.

I have three and a half bars (a little more counting stance bar and pet bar bands that are still within reach) fully keybound and the only ones that aren't in range of my hand without moving it are placed far away on purpose, like having Time Warp / Bloodlust on J. And I don't exactly have big hands.
Counting modifier macros of which I have plenty we're talking about upwards of 50-60 keybinds within easy enough reach that I have no problems using them while moving at the same time (which is a pretty good criteria to base keybinds on, though it varies a bit depending on how actively you mix mouse movement, strafe keys, autorun where applicable or any combination thereof plus movement patterns).
If you have many characters a small tip is to use the same keybinds for similar abilities.

Bind and click. It should be simple to set up a full dps rotation on your 1-9 button bar, anything like a defensive spell or CD put in a bar for clicking, things you don't need every rotation but instead every 30sec or so. This way all your damage spells are at the ready and if you need to click something it is rare and you can be ready to hit it. Easier than key binding everything and better than hunt-a-click. After all, with high latency you want to be already pushing the button for the spell so it goes off right away, not waiting for the server to respond and then clicking. My guess is that would double your latency. Things are probably half dead before you start clicking through your rotation.

I'm running a small guild and have been the GM since lv 1 (it's 25 now). Over the time I've seen all kinds of people, from the arrogant person who believes they knows everything but somehow always manage to get everything wrong (and usually blame it on someone else or lag), to modest people that are really skilled and new players, both the ones that put an effort in trying to learn their class and game mechanics and those who are content with their quest gear and isnt intrested in getting any further. Our guild have always apreciated the players that joins and admit they dont know everything, but are willing to take pointers and learn over time. I cant say for sure, but I believe most smaller guilds work like that. I've noticed that people who dont fit our group, people who are jerks and like to put others down usually leaves the guild relatively quick. If you are interested in joining a guild, you should probably try and join a smaller one (not nessesary a lv 25 to get access to perks). Most guilds tends to do guild dungeons for guild exp (pre 25) and for guild bank gold. So joining those events would be a good idea. It would make you feel more secure as well doing things with your guild and wont make you feel like a screwup if you get things wrong. And dont be afraid to admit if you dont know strategies etc, if you are in a decent even semi friendly guild they wont mind to help you get a hang of things. And you'd get the chance to ask guildies who might be playing the same class as you are for advice. It would also be a good idea if you visited

, they have easy guides when it comes to spells, talent build, glyphs rotations etc. But as someone said, you only use a few spells mostly, 1-2 main spells and a few filler spells together with cooldowns. Keybinds or no keybinds is something you'd have to figure out yourself though. Some people cant play without them, I myself cant play with them. I usually only use 1-4 on the action bar and click the rest. If you have several 85's and have never used keybindings you'd probably just find it confusing to try and start using it now.

If you're at the bottom of the dps pile, I can guarantee you that it's not because you're a clicker. I'm a clicker, and not to turn this into a clicker vs. keybind debate, but I've been playing wow for 8 years now and rarely am I not among the top dps in dungeons (both my caster dps and melee dps). The ONLY time keybindings are a must are when you're healing or PvPing, otherwise, you can tank and dps flawlessly as a clicker. I have tested and proved this time and time again.
I put healing in there because unlike most healers these days, I am a "real" healer who doesn't use mods to heal for them, which means I click players to cast heals on them. Because healing is time critical and you're targeting multiple people (unlike dps where you're burning a single target 90% of the time), using the number row to heal while clicking players allows for much faster reaction times.
Back to your DPS issues, you just have to stick to one character and practice, practice, practice. My understanding is arcane mages are the lowest mage class right now, so that plays a roll. For spells, you can start casting them before your current spell being cast is finished. That shaves off a small but critical piece of time that will bump your dps up. Be sure you're using your proc's effectively and use your cooldown's appropriately. Also, when you're standing still, you should have a cast bar present on your screen at all times. When you need to move, refresh your dots or use your instant cast spells. If you're melee, make sure you're behind your target at all times (unless you can't). And, if you're finding yourself getting frustrated and you just can't figure out what you're doing wrong, maybe you need to try tanking or healing. An incredible healer I know can't DPS for the life of him.

After years and years of raiding, I've found that (in my personal experience) clicking versus keybinding is not going to make you a bad player.
Keybinding is definitely faster and more efficient, but you can still perform well as a clicker.
PvP, on the other hand, is where mouse-turners and keybinders will eat the clicker and keyboard turners for lunch.
