The majority of the quests were redone for Cataclysm, even if everything stayed the same, the quest ID still changed.
This means that even though you've done that exact same quest before the Cataclysm, you'll still need to do the new version of the quest.
I got Loremaster before Cataclysm, and my progress for nearly all the new zone achievements is 0, even though a lot of the quests in certain zones remained the same.
*edit* Make sure you are using the latest version of your addon. In addition, go and visit some of the quest givers your addons tells you should still give you quests to make absolutely sure they don't have a quest.

Try adding your character here on Wowhead. Once you do and claim it, go to the page and right above your stat sheet you will see a set of tabs. Clicky "quest", then zone and then "incomplete".
Should show you exactly what you have not done. The only ones not tracked are repeatable and those not stored in quest logs.

That's not even necessary, the Profiler gathers all characters from the Armory:

it shows I have not completed the quests for me to get my Wintersaber mount, I KNOW I have done those quests I have the mount!
Did you maybe get the mount the "Classic" way, with the rep grind? Those were mostly repeatable quests, but were removed anyway a while ago in favor of a daily quest system, which would also show up in your addon if it doesn't categorize them correctly, not to mention that its data can be outdated/incomplete in general. When I look you up on the Wowhead Profiler (see above) I don't see any incomplete quests I associate with the Wintersaber grind (recently did it on my first Alliance 85) so that can't be the culprit. However, I see various other incomplete quests. Hope you can find them with the help of the Profiler :)

There is an add-on called Loremaster on Curse. Highly recommend it. It helped me find several quests in zones that I was missing due to drop quest items.

I didn't use the addon from curse, but I hear its very useful.
I did find that searching the zone I was stuck on for "items that begin quest" drops was helpful because I tend to skip looting mobs or somehow missed them.

I recommend Tom-Tom and WoW-Pro. Gives you a very comprehensible guide with steps, like:
! Take quest A. When you do it, ping, ! Take quest B.
and so on. It tells you how many of what to kill, or how many of what to loot, along with 'go there and there speak to that one and do that'. It also makes sure you pick up Items that start quests, or items that can be leaved in for a repeatable quest without having the actual quest first.
Tom-Tom gives you a pretty little arrow that you put where-ever you want and WoW-Pro will use it to show you exactly where to go. Wonderful thing.
Oh and also, WoW-Pro will automatically go from zone to zone. Say you finish all quests in Hellfire Peninsula, by that time it'll already have told you to pick up some quests in Zangarmarsh, and it'll tell you 'Guide's over, go visit trainers, AH, whatever' in a nicer way, when you're done you just click on and it'll start the Zangarmarsh guide without even asking.
You can also choose guide in the options, and skip steps.
