There are two major ways of how people teach martial arts. The first is like a self-defense course. You mostly listen to what your trainer says, see him demonstrate various moves, then you like form pairs and stuff and you practice on each other, but it is all very controlled and safe and watered down. Then there are people who basically teach martial arts as a sport, and you get actual sparring in those (not right off the bat ofc). Or at least thats how it works in my country. So I would advice to investigate a little on what approach do they have in a course before joining it. Like, I know there are karate trainers in Slovakia that only teach self defense moves and Katas and stuff, and there are other karate trainers whose trainees are actually competetive and stuff.
Also, I would suggest you pick one style and stick to it. Learning a martial art is not a short term commitment. Jumping from one class to other is pretty bad. So if you think kickbox would be for you, do not think like "maybe as a starter I should pick Jujitsu", no. Go do kick box (or whatever you really like).
And as for which sparring oriented styles I would suggest... Muay Thai, Kickbox and Judo are pretty popular here in Slovakia. If you want to do sparring with grapples and counters, maybe Judo would be best. It's not like in Muay Thai and Kickbox sparrings people try to kill each other, but I find those two styles a little more prone to make "accidents". My friend is a kickboxer and he is pretty beaten up from trainings sometimes.

I did 8 years of tae kwon do. Loved it and I'm seriously considering picking up a martial art again.
Martial arts are split into 2 disciplines: soft and hard. Soft arts are those that work with the power and momentum of your opponent ie grappling arts (ju jitsu, hapkido, wrestling). Hard arts are those based on striking, such as tae kwon do, kung fu, muay thai and karate.
For power, agility, strength and conditioning, choose a hard art. For real-world usable self defence, choose a soft art.

I did several many, many moons ago. Karate as a child, some Kung Fu as an adult, interspersed with Tae Kwon Do and Kuk Sool (another Korean form, high impact, has more grappling than TKD). I'd really like to get back into another, but I think I'm getting on in years for it. Maybe Aikido or really devote myself to Tai Chi.
OK, your question. If you can, see if you can find a school that teaches

. Grappling, sparring, takedowns, very high impact, it's a very cool form. Problem is, it's not taught much at all outside Russia and Europe. You might also look at
Krav Maga
, the Israeli art. Also what you're looking for, and much wider availability. Although Krav Maga doesn't much like grappling/throwing. Still a pretty cool and very effective style.

I didn't see any reference to 'sport'. "Essentially when I am trained enough I want to spar or fight with people. Like full blown grapple, counters, kicks and stuff but 'controlled'. As is we hurt each other but we don't try to break each others bones and faces and stuff." That's what I was going off of.
Krav Maga does all that, as far as I know. The training, again as far as I know, does involve sparring and freeform training.
When I think of a 'sport' martial art, I think tournaments and points. Tae Kwon Do, Karate, etc. The ones you see in the Olympics. Maybe we're operating on two different notions.

Once upon a time...I did Tae Kwon Do. Too bad they only cared about money and sold sparring equipment and lessons for ludicrous prices.
