We are a very casual raiding guild that recently has just started on DS. Even with the 15% help buff we are struggling with this fight.
The dps average anywhere from 17k to 23k. We are running three healers to help with the Plasma and the increased damage at the end.
Our Strat:
Tank hold the Amalgamation at the front. Second tank holds the bloods in the rear. Ranged and healers are in the middle. DPS the Amalgamation to approx 20% then run him through the bloods. We usually have no issue with the first plate. After that however we soon are overrun by the bloods.
Is it better to have everyone stack on the tank or within range to take advantage of AOE healing? What is the best way to handle the bloods?
Any advice would be greatly appreciated.

Everything Narragaan said has saved me from typing a wall of text. I also play a warrior.
Single tanking is the way to go on Spine and Madness. It did take some practice and some gear, but we got it down to a T now.
Can I ask what class the tanks are? You didn't say in your OP. How to handle the fight depends on the tank :)

Not really tbh. I've one tanked normal both spine and madness on a druid and a death knight, and I've had paladins + warriors tank for me on alts. All are approached virtually the same, with the exception of which cooldown to use when on madness and that is only due to having different cooldowns. For spine you just have a tank picking up bloods after he picks up amalg. First two plates pick the bloods up immediately, last plate pick them up more controlled since there will be enough bloods very quickly, and you don't want the amalg hitting 9 early if your healers are undergeared.
On madness just pop CDs to live impales and hope your dps doesn't suck and can beat second impale. Sometimes you may eed to call for a pain suppression if you are careless with keeping track of your own cooldowns, but overall these 2 fights play out about the same no matter the tank.

Too many bloods? AoE more.

I see we are talking about regular mode.
You should have the blood tank the bloods against the Plate, slightly to the left or right of center. Tank the Amalg in the middle of the area with the healer pile. Once you have 9 bloods dead (and the Amalg at like 1 million health), drag the Amalg through the blood pile and then burn it.

As long as DPS know not to ignore the bloods, you should be fine. If "too many bloods" is your only problem, consider yourself lucky. :) That's any easy fix, compared to 'DPS ignoring Fiery Grips' or 'healers not being able to clear Searing Plasma.'

I usually one-tank this fight. We tank the hideous near the center of the plate we're going to blow up, with ranged and healers more in the middle the back. This keeps the bloods away from the hideous so the tank doesn't take unnecessarily higher damage. One tank and three healers gives you plenty of DPS to whittle the hideous down as well as to handle the bloods.
AOE healing doesn't require everyone to be right up on top of each other. I wouldn't recommend that here, like I said, because then the hideous could pickup stacks earlier than needed.
