In DPS terms,
Jewelcrafting
and
Blacksmithing
would be the best.
Reason is because of
Dragon's Eye x3
.
You also get two extra sockets because of Blacksmithing.
In terms of fun,
Engineering
is the way to go. You just gotta love the
nitro boosts
.

Jewelcrafting and Blacksmithing are best dps increase for Surv and MM since they will allow you to get an extra 42 and 40 Agil respectively.
Engineering is harder to figure for buff, but the rocket gloves have (i think) the best DPS benefit of all, as long as you remember to use it. The boot enchant (crit) is the best available for Hunters.
besides that, you get access to the AH in Dalaran, a portable mailbox and access to a bank and repair with cooldowns.
Best is being able to make your own ammo on the fly with only a 2 stacks of mats to make 20 stacks of arrows or bullets.
Engineering is a very fun profession. You also get the best
cloak enchant
for hunters, a
rez
(which can be nice when your group wipes, but you FD) and a
teleporter
(epic flyers are so slow).
There is also Herbalism which gives you a
heal
, and Inscription which gives you 80 ap like most of the others and allows you to skip the Hodir grind for
shoulder enchants
.

I personally have Jewelcrafting and Leatherworking!
+34 Agility gems + 130 AP on bracers also free leg enchant for every upgrade is not bad at all :D

My 2 cents:
Mining/herbalism and Skinning while levelling. It's all about the CASH!
Once you hit 80 (or thereabouts) you can drop one for another profession. If you want to go Alchemy you can use some of the herbs you gathered while levelling to boost that profession up. Same with Blacksmithing and Engineering. All that mining you did while levelling will come in very handy.
Skinning of course leads directly on to Leatherworking. Just use a Profession powerlevelling guide to clue you in on how much of a particular item you need, so you can put it aside instead of selling it on AH.
If you're already 80 then you've got a bit of farming to do. AH is pretty expensive when it comes to powerlevelling a profession with cash, so watch your wallet.
Personally I'd go with Leatherworking. Engineering seems good too, but eventually Blizzard will add Relic/Idol style Ammo, making all craftable ammo pretty much redundant overnight.

Ammo changes *should* come in Cataclys. We're speaking of something that still needs a lot of time.

Of course, if your aim is to raid then leatherworking is far from the most ideal profession, but other than that it's really quite nice.
I got a question, why is leatherworking for raid then other professions?

There is no best profession.
For money making just pick any two crafting professions. Skinning plus either Mining or Herbalism works very good since you can only have one of those two displayed on the minimap. A switch macro and Mining + Herbalism will still work, it's just a bit more of a hassle.
For raiding it really does not matter. Yes, BS/JC will have a very very minor advantage over others since you get agility from the profession instead of AP that other crafting professions would give. And Engineering has the glove rockest which (afaik) will give an even bigger dps boost. Still they are all so close that you will hardly see any difference. Just pick any two crafting professions you like when raiding. The difference will be no more then 10 dps. At most.

Considering base damage and cooldown (45 seconds):
DPS = ((1654+2020)/2)/45 = 40.8
Rockets will give you at least
+40 DPS bonus
. They can crit too... so DPS will be way higher.

Engineering and Jewelcrafting. Jewelcrafting provides only passive bonuses while engineering provides passive bonuses, mounted pyro-rockets + the best of them all - rocket boots tinker. With the rocket boots you can save yourself from fail and also reduce movement. As a hunter: Movement = DPS loss, so this would probably boost it even further.
