That's actually really clever, I like that a lot. Maybe for holy priests, you got "Use Holy Word: Sanctuary three times in one level cap boss" for 10 points or something. Though in not quite sure how well that would be implemented, it is a very good idea. I would love to just keep in touch with making these kind of achievements up and maybe some day they would be implemented.

I think another way this can be beneficial is you could tailor the achievements specifically to bosses and their abilities. Take your mention of the more indepth class quests (which I love, by the way, I miss class quests). You could warp that class quest around into the achievement "
Avoid taking any damage from <Boss>'s <Moderately Dangerous Spell> by using your Spell Reflect ability
". I don't know about anyone else, but when I first started, I paid
very
little attention to my utility abilities. I think the first time I actually used Kick or Gouge on my rogue to interrupt a spell (let alone stunlocking) was around level 50-something, maybe later.
A system like this could bring attention to a player's utility skills that they might have overlooked. Though, I suppose it's a little better now that you don't have to wade through new ranks of 5 other spells to find actual new skills.
In addition to that, it also helps teach the player (in this case, the warrior tank) the value of doing what you can to reduce stress on the group (particularly the healer in this scenario). This seems to be something that isn't as common as I'd like to think, and it's especially valuable now that Cataclysm dungeons have many more dangerous mechanics that we haven't seen for all of Wrath.

In your defense, I don't know when you made your rogue, but Feint didn't get the AoE reduction until early Wrath.
These would have to be implemented with base skills, i.e. ones that are not talented, as then it forces people to use these talents, even if it is the best, as I know Blizzard say they hate to pigeon-hole players into certain cookie-cutter specs, etc.
Alternately, you could implement a set of achievements for each spec. Especially in the case of a Warrior, or Druid as another major example, there are situations where an important skill/utility would be completely inapplicable simply because it's not usable in a preferred stance, or it has no purpose. Realistically, a Fury warrior (sticking to our example!) would never be in a position to get that Spell Reflect achievement. Partially because he's not tanking, but also because doesn't have a shield euqipped to use the ability in the first place.

1. Do not get hit with
Quake
during an entire Heroic Stonecore run - 10 points
2. Do not get hit with
Crystal Storm
during the Slabhide encounter in Heroic Stonecore - 10 points
3. Do not be killed by Corobus' leaping during the underground phase in Heroic Stonecore - 5 points

I like the idea. Bring back class quests. These quests will actually teach you how and when to use your spells. Maybe instead of just buying the spell you actually have to learn the spell from the trainer. I think you should still have to pay for the training but instead of just getting the new spell you have to use it in combat with the trainer before you can use it else where. Or just make class quests to learn spells optional for ach points. This way you get to see what the spell does and how and when to use it.

Even if that's not what it's intended to be, achievements could lead to gearscore-like behavior in some ways, though I guess there would be relatively ways to avoid most of the problems, at least those that come to mind right now.
Would that necessarily be a bad thing in this case? Gearscore was such a problem because of the way it gave this number that everyone used to wave their around. While the tool itself offered other analytical tools, no one used them, so it became a contest of who had the
bigger
higher number.
In my opinion, if people start demanding a certain number of "class achievements" be completed, or certain ones be completed, it would at least be a reasonable and telling indication of the person as a player, and whether they know the functions of their class, and have put them into practice. You could get a high GS by being carried, whether through favour or by paying. In this case, you'd have the complete the critera. Granted, you can't guarantee that they'll actually put it into practice, but this way you'd know that it was the player being a lazy jerk, and not a case of ignorance. (This says a lot about a player, at least it does to me.)

Or just let players actually read their ability's, visit forums, and otherways spend time researching their class. The game is already easy enough, people should just put some effort into it if they want to be good.
Also, I doubt this would help because yeah, you can have the achievement, but thats no reason to actually do that stuff in dungeons/raids.
