Hit will be coming from T10Glove/T10Legs/RepRing Gem for the remainder if you are Alliance or get Bracers or Neck for the remaining hit for you Hordies(or Alliance who don't get Draenei in group consistantly)
First shoot for going over the Haste soft cap of 400
Then shoot for getting over the Crit soft cap of <play with rawr as it's so damn variable from bufffs/gearlvl/etc>
Then shoot for high iLvL SP/Crit/Haste gear. Anything with spirit is not a strong enough boost to be worthwhile (sorry it's the truth when you look at the benefits of Crit/Haste even post caps)
If you really really want to min/max you can look for getting hit elsewhere and replacing the T10 glove OR legs with a frost emblem gear or crafted cloth gear. But this is really only for the high ened late game raiders who have unrestricted looting rulles and a raid that consistently clears the content needed for these items. (this is why loot lists from EJ are actually kind of bad to follow for the readers here)
Edit: All of this is directed at T10 level gearing solutions based on personal observations about gearing flexibility. If you are newer or do not have access to this level of gear I can see what I can cook up but I've not looked at the state of gearing for new to 80 boomkins.

For new boomkins:
Hit capped (as listed in the FAQs)
Haste soft capped at 400.
Crit capping is not really a possibility for you guys but you should be working towards it even so.
Notes:
The best trinks are going to be Crit/Haste with SP procs (Haste and Crit procs are pretty damn poor sadly). Some Straight SP trinks with other proc mechanics are worth while. Take a gander at the Moonkin 101 thread for trinket rankings for a good idea of what I mean.
The 4T9 set bonus available through Triumph badges is pretty strong however try and find a piece of off set gear for the Legs as the T9 legs are very weak on stat allocations (unless you direly need hit rating)
