But here's the thing: It's just as much a matter of controlling your expenses as increasing your income.
Investing in class skills is good. Investing in mounts is good. Pretty much all other spending should be kept to a minimum.
People with money troubles often buy items on the AH as they level, giving out five or ten gold for an item they will use for a very short time. Don't do that if you can't afford it. And then vendor all greys, and put all greens+ in the AH, and all the white items that sell.

Yes, Mining/Herbalism should bring in more than either with skinning. Most people don't do it because you have to keep toggling what your looking for. And yes you should make plenty of money if you always look out for herbs and mines while you level. Personally there are times I completely forget to look at my minimap when leveling and have to go back to an area to skill up because I can't mine/herb in the zone I'm in.
Regular mount (lvl 20), epic mount (lvl 40), flying mount (lvl 60), and cold weather flying (lvl 77) should all be easy enough. The tough one will be Epic flying (lvl 70) which costs 4k gold. Make sure you always check if ore will sell better than bars, this is usually the case because of Jewelcrafters prospecting, but not always. And make sure you do the math if it takes 2 ore to make one bar.
