Yes I am in the same boat as the OP, I am level 68 and holding off on going to Northrend until I get the Cobalt lvl 70 gear and am able to use it. The only thing I would def get rid of in your gear is the boots. Also, even though your not 80 yet I would stack some defense and focus a bit less on STA. Usually you will get STA buffs anyway from group members. That DK probaly was only a slighly better tank then you could have been if at all and you had every right to tell him to stfu. UK is not hard anyway...
I would also like suggestions on gear please comment on mine but be aware I have lvl 70 gear in the bank.... name is dunkacinno armory me please.

Seems like you've skipped over a lot of easily obtained tank gear in favor of DPS gear. Stamina is important, yes, but you seem to focus a bit too much on it.

Well, things do get a bit tougher right at the transition between expansions, not least because the first instances in each expansion are to some extent balanced for people coming out of the previous expansion with max-level gear, sometimes of excellent quality. You're in greens mostly while many came out of TBC at level 70 with raid gear that would often not be replaced until Naxxramas.
That, plus many are playing on alts and are used to extremely easy heroics at level 80 because gear has completely trivialized them; and then they're surprised when doing low-level instances can actually sometimes be tougher.
And then at the end of the day, stamina just isn't everything. You want defense too. What stamina does is make sure you don't die before the healer can get the next heal(s) onto you; but it doesn't reduce the amount of damage you take at all, so if the boss is doing more damage to you than the healer can heal, you'll die eventually regardless of how much stamina you have.
Then you'll need things like defense and armor to save you. Since spike damage is less of a concern in levelling dungeons than heroics/raids at max level, the single-minded focus on stamina is not that great of a strategy. Sure it'll work at low levels (up to ~50 at least) since those instances are just so easy, but as the difficulty ramps up it might be better to shift the focus a bit toward actually reducing damage taken. Ie. defense, armor, avoidance.

I am also currently trying to lvl a warrior tank - but she is not on my home server, but on a completly different one, as a result, I don't have access to any Heirlooms, nor do I have a sugar daddy to get gears from the AH. I am currently lvl 72 and so far here is how my char is looking like:

I started tanking on this character shortly before hitting 58 and going to TBC content to pick up some initial tanking experience while it was still somewhat forgiving. Once I have hit Outland, I tanked pretty much every pre 70 dungeons there was, and on the way I made sure I picked up every quests available (including those part of a chain). As a result, I have been able to pick up some very decent blues which have made my transition into Northrend content much smoother.
My most priced possession is probably the
Myrmidon's Headdress
from the
SV quest
- It has a gem and a meta slot, very rare this early I have found.
Before heading to Howling Fjord, I also made sure I picked up the quest in SL that gave my current
pair of bracers
, and do that chain in Netherstorms that gave the truly
excellent trinket.
With all that, and combined with a few lucky drops from Outland dungeons, stepping into UK was frankly not a big deal. It wasn't easy, but I never noticed my health bumming out at too alarming rate.
Once in Northrend - I have continued my trend to pick up quests for dungeons before queuing up for them. (Nexus has 4 available quests to be done - 3 out of 4 has great tanking rewards!).
As far as questing goes, I do'nt mind it, but I also don't always enjoy it, but you cannot deny that some quest chains have got fantastic drops - if I really dread questing I just go onto wowhead, browse the quest rewards available in the zone i'm lvl'ing and then do the quests chains that gives something I want. That's how I got my
trinket
, and the
sword
I used to use.
Long story short, I would suggest looking back at a few dungeon quests in Outland, you may be surprised at how good they are. But other than that, I would say just stick to it - don't let nay sayers bum you out just because you have greens.

while many people knock BoA gear, the plate chest and shoulders that I have give resilience, which yes is INTENDED for pvp, but still works to reduce the bosses crit chance on you....only when you can get peices that severely out class the heirlooms should you replace them . And for a lvl 68-69 warrior, UK is doable until the final boss....I cant remember how many times I tried to get through there only to die on him because if he got a crit hit on me, I was toast before the healer could respond. The defence gear basically makes this problem non existent and so the instance easy...until then, careful planning on shield wall( or getting the glyph so you can use it multiple times on that fight) might get you to a win....
btw, it is a night/day change when you get the cobalt set.....

You "could" technically get some of the cheaper stuff crafted or BoE's from the AH. Here's a
short list
of items that are BoE that you can use before or at level 70.
I returned to my long retired warrior on the pvp server and respec'ed to tanking again. I've raided with my horde warrior but it was sorta nice to go back and try the warrior again without all the gear. I was lucky enough to have enough pvp resilience stuff to make myself somewhat uncritable.
The rest of the items were mainly crafted pieces I made back in a day. If you farm the mats via mining (not sure what your profs are) or check the AH, you may be able to pickup a few cheap pieces. These should get you through the initial transition to 70 and Northren dungeons. After doing the quests in UK and Nexus, you should be fairly well geared.
Another option is to do those quests as dps, or with a lvl 80 buddy/guildy. You only need to do them once to get a decent 70 starter set.

His BoA gear has a grand total of ZERO resilience. That's why it isn't really tank gear; it's still not a cardinal sin to use it since the armor and stamina are good, but a decent item with defense would most likely be better (except for the XP boost of course).
As for the last boss in UK, just move out of the way of his smash (or whatever it's called, the frontal cone spell).
